What could be better than rich, smooth chocolate with a hint of cinnamon and the incredible texture of roasted pecans? Absolutely nothing! I came across this fudge brownie recipe and knew I had to try it – immediately! And even better, all my gluten-free friends will jump for joy, as they’ll be able to indulge wholeheartedly in this delectable brownie delight! It’s so fabulous you won’t even miss the gluten!
Gluten-Free Fudgy Pecan Brownies

6 tablespoons unsalted butter, cut into pieces
1/3 cup cornstarch (spooned and leveled)
1/4 cup unsweetened cocoa powder
1/2 teaspoon ground cinnamon
1/2 teaspoon fine salt
12 ounces (1 bag) milk chocolate chips
3/4 cup sugar
1 teaspoon pure vanilla extract
3 large eggs
1/2 cup chopped toasted pecans
Preheat oven to 350 degrees. Prepare an 8-inch square baking pan with cooking spray and line with parchment paper, leaving a 2-inch overhang on all sides.
To toast pecans, in a small non-stick skillet over medium-low heat, place chopped pecans and toast, stirring frequently until they become fragrant and begin to lightly brown. Remove from heat and let cool.
In a medium bowl, whisk together cornstarch, cocoa, cinnamon, and salt. Then in a large microwave-safe bowl, microwave butter and chocolate in 30-second increments, stirring each time, until almost completely melted, about 2 minutes, then remove and continue stirring until entirely smooth. Stir in sugar and vanilla. Then stir in eggs, one at a time, until well combined. Add cornstarch mixture and stir vigorously until mixture is smooth and begins to pull away from side of bowl, about 2 minutes. Stir in pecans.
Pour batter into pan and smooth top. Bake until a toothpick inserted in center comes out with a few moist crumbs attached, about 35 minutes. Let cool completely in pan on a wire rack. Using paper overhang, lift cake out of pan and cut into 12 squares.
