Creamy Lemon Bars

For the love of lemons!  Yes, here we go again…something tart and lemony! For me, anything made with lemons makes me happy, especially if it’s a sweet treat!  I think the sunny yellow color and the bright flavor that burst from this small fruit are emotionally positive! Even just writing about lemons and what I make with them will keep me smiling the entire day and hopefully that cheerful outlook will become contagious! I hope you love lemon as much as I do because around my home, lemon bars rule!  Over the years I have made many variations of these delectable treats and here is one of my favorite recipes — cool and sweetly tangy.  Let me tell you, these luscious creamy squares are out-of-this-world!  So pucker up and put a smile on your face!

Creamy Lemon Bars
(Recipe adapted from here)

1/2 cup (1 stick) unsalted butter, room temperature, plus more for pan
1/2 cup confectioners’ sugar, plus more for dusting
1/4 teaspoon salt
1 cup all-purpose flour, (spooned and leveled)
4 large egg yolks
1 can (14 ounces) sweetened condensed milk
1 cup fresh squeezed lemon juice (from about 3-4 lemons)
1 tablespoon grated lemon zest

Preheat oven to 350 degrees. Prepare an 8-inch square baking pan with cooking spray. Then line bottom with parchment paper, leaving an overhang on two sides; spray the paper and set aside.

Make crust: Using an electric mixer, beat butter, sugar, and salt until light and fluffy. Add flour, and mix on low just until combined. Press dough into the bottom and up sides of prepared pan; prick all over with a fork. Bake until lightly golden, 15 to 20 minutes.

Make filling: In a large bowl, whisk together yolks, condensed milk, lemon juice and lemon zest until smooth. Pour over hot crust in pan; return to oven, and bake until filling is set, about 25 to 30 minutes. Cool completely in pan.

Refrigerate until filling is firm, about 2 hours. Lift out of pan using paper overhang.  Cut into 16 squares, dust with confectioners’ sugar and serve.

You’ll enjoy making these incredible citrus bars throughout the entire year, and of course especially during the hot summer months.
