Frosted Chocolate Cookies

Ingredients:

Chocolate Cookies:

  • 2-1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1 cup granulated sugar
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract

Frosting:

  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 3-4 cups confectioners sugar
  • 1 teaspoon pure vanilla extract
  • 2-4 tablespoons heavy cream or milk
  • 1 drop blue food gel
  • Festive sprinkles, whole and crushed M&Ms for garnish

Instructions:

For the Cookies:

  1. Heat your oven to 375 degrees (F) and get out your cookie sheets.
  2. In a medium bowl, add the flour, cocoa powder, baking soda, and salt. Whisk until combined and set aside.
  3. Into a large bowl of a stand mixer with the paddle attachment, add the butter, granulated sugar, and brown sugar and beat on high for 5 minutes. With the mixer on low-speed, add the eggs one at a time, then add the vanilla and mix until combined. Then gradually add the flour mixture until just combined.
  4. Using a large cookie scoop, scoop the dough and place on your baking sheet, placing about 2-inches apart, and press the tops down slightly with your palm. Put the sheets in your oven and bake for approximately 10 minutes – do not over bake! Let cool completely on the pan before moving them to a wire rack.

For the Buttercream Frosting:

  1. Into a large bowl of a stand mixer with the paddle attachment, add the butter and mix on high for 5 minutes until fluffy. Add the confectioners sugar, heavy cream or milk, and blue gel and beat on high-speed for 5 minutes until light and creamy. Adjust the sugar or milk depending on the consistency you like.
  2. Using an offset spatula, frost the cookies then top with the sprinkles and M&Ms.
