When most people think about fall — pumpkin everything is on their minds.

But not mine!

Ok, I like pumpkin a smidge, but I wholeheartedly prefer something cinnamon-spiced infused. That’s where this Spiced Quick Bread with Cinnamon Pecan Crumble comes into play.

You see, I wanted to make a fall spiced bread without the addition of pumpkin.  So, I decided on this quick bread recipe that comes together easily using a few simple ingredients — yes it includes a boxed Spice Cake Mix, eggs, vanilla, cinnamon, and a splash of milk.

Now, I’m not one to use boxed cake mixes very often, but if you are looking for something quick and easy, then this really is the way to go!

I also did not stop with just turning the boxed cake mix into a quick bread, I decided to take it to the next level by adding a crunchy cinnamon pecan crumble topping.

Let me tell you, the outcome was pure deliciousness!

The dense spiced bread topped with the thick, crunchy cinnamon pecan crumble is a match made in heaven! Really! And if it seems there is too much crumble — there is not. Here, more is better!

This quick bread is perfect to have with your morning coffee, as a mid-afternoon snack or just about anytime you’re in need of little treat. The best thing is, it’s not too sweet!

Spiced Quick Bread with Cinnamon Pecan Crumble

Ingredients:

  • 1 box Spiced Cake Mix
  • 1 teaspoon ground cinnamon
  • 3 large eggs
  • 1/4 cup milk
  • 1 teaspoon pure vanilla extract

Crumble:

  • 1 cup all-purpose flour
  • 3/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • pinch of salt
  • 1 stick (1/2 cup) unsalted butter, melted
  • 1/2 cup chopped pecans

Instructions:

  1. Heat your oven to 350 degrees F.  Then line a 9×5 inch loaf pan with parchment paper and spray with non-stick spray and set aside.
  2. First, make the crumble. Into a small bowl add the flour, sugars, cinnamon, and salt and whisk until combined, then add the pecans. Pour in the melted butter and fluff gently with a fork until you get large crumbs. Place into the refrigerator until ready to use.
  3. Into a large bowl add the cake mix, cinnamon, eggs, milk, and vanilla and stir with a spoon until well combined. Pour into the prepared pan. Then top with the crumble.
  4. Bake for 50-60 minutes, or until a toothpick inserted into the middle comes out clean. Cool on a wire rack for about 15 minutes, then remove bread from pan and let cool completely before cutting into slices. Enjoy!
