Why do so many people like Rocky Road Fudge? Simply put, it’s darn good! And it’s probably because of the amazing combination of chocolate, marshmallows and walnuts!

My husband is one of those people who LOVES Rocky Road Fudge. It really is his all-time top candy to eat! His favorite place to get this treat is from See’s Candies. In his honest opinion, See’s makes the best candy. Ever. Period. End of discussion. I have to admit, I also like this traditional candy shop. I have been a fan of their confections ever since I was a little girl. I adore the sweet smell of chocolate and of course, the free samples with every visit!

Now it seems, every time my hubby is craving something sweet, he will ask, “Are you going to See’s? And if so, bring me back some Rocky Road Fudge.” And about 99% of the time, it’s a, “nope” from me! That’s because I don’t really like going to the mall — that’s where the closest See’s store is located, and I would rather make the candy than buy it! Go figure!

And, let me tell you, this recipe is so easy — it only takes 4 ingredients and does not require baking!

Once ready to eat you will be delighted by the texture of smooth, rich chocolate engulfed with fluffy marshmallows and crunchy walnuts. I added lots of marshmallows and walnuts — just the way the hubs likes it!

Be warned, a little piece goes a long way. And, if you have a family who likes sweets (like mine), you may just want to make a double batch! It’s also great for snacking on in the middle of the night to satisfy that sweet craving! It’s also a great gift to share with someone special — that is if you can make it and get it out of the house without letting your family know what you’re up to!

The boys loved this stuff! Winner! I’m already thinking about making more!

Rocky Road Fudge

Ingredients:

1 can (14 oz) sweetened condensed milk
1 package (12 oz) milk chocolate chips
4 cups mini marshmallows
2 cups walnut pieces

Instructions:

First, prepare an 8×8-inch baking pan with a coating of non-stick spray. Then line with parchment paper, and repeat with the spray and set aside.

Into a large bowl, add the sweetened condensed milk and chocolate chips. Microwave on high for 1 minute, then stir and microwave for about 30 second intervals until chips are melted. Be sure to take care in melting as not to scorch the chocolate. Stir to ensure chips are melted and smooth.

Add the marshmallows and walnuts, then fold until incorporated. Pour into your prepared pan and smooth to an even layer. Sprinkle a handful of mini marshmallows on top and gently press down. Place in the refrigerator until set, or overnight. Then remove from pan, slice into small squares.

Note, my husband likes a lot of marshmallows and walnuts, you can use less if you prefer. Also, no need to chop the walnuts, when you slice the candy the nuts will be sliced.

Peanut Butter Cup Fudge

Ingredients:
12 regular size peanut butter cups
1 (24 oz.) package milk chocolate chips
1 (8 oz.) can sweetened condensed milk

Instructions:
Line a 8×8-inch baking pan with aluminum foil. Unwrap the peanut butter cups and place 9 peanut butter cups in the bottom of the pan. Coarsely chop the remaining 3 peanut butter cups and set aside.

In a medium-heat proof bowl, add the chocolate chips and sweetened condensed milk. Place in microwave and heat for 30 seconds. Stir and if needed, heat for another 30 seconds, checking at each 10 second interval to ensure the chocolate does not scorch. Mixture should be almost melted. Remove from microwave and stir until smooth.

Pour the chocolate mixture over the peanut butter cups and smooth the top with the rubber spatula. Sprinkle the top with the chopped peanut butter cups. Place in the refrigerator until cool (about 1-2 hours). When ready to eat. Lift the fudge out of pan with the ends of the aluminum foil, then take the foil off and place on a cutting board. With a sharp knife, cut the fudge in small squares. Store in the refrigerator.

Peppermint Fudge Cupcakes

That’s why you’ve got to try these Peppermint Fudge Cupcakes. I am in love with them! The moist and rich dark chocolate cake topped with delectable peppermint buttercream frosting and lightly sprinkled with crushed candy canes will make your taste buds tingle with delight!

These cupcakes are super easy to make and if you can’t get enough of wonderful combination of peppermint and chocolate, these little gems will satisfy your cravings! Peppermint Fudge Cupcakes

Chocolate Fudge Cupcakes
1 box (15.25 oz) Pillsbury Moist Supreme Dark Chocolate Premium Cake Mix
1 cup milk
2/3 cup butter, melted
3 large eggs
1 teaspoon pure vanilla extract

Peppermint Buttercream Frosting
1 box (3-1/2 cups) confectioners sugar
1 cup (2-sticks) butter, softened
1/2 teaspoon pure vanilla extract
1/4 teaspoon pure peppermint extract
1-2 tablespoons heavy cream

chopped candy cane pieces, for garnish

Heat your oven to 350 degrees. Prepare 2 cupcake tins (12 openings each) with paper or foil liners and set aside.

For the cupcakes: In a large bowl of an electric mixer add cake mix, milk, butter, eggs and vanilla and mix on medium speed for about 2 minutes. Spoon batter evenly into prepared cupcake liners, about 3/4 full. Place in oven for about 20-25 minutes, or until toothpick comes out clean when inserted into the middle. Cool for about 15 minutes in the pan, then remove and place on a wire rack to cool completely before frosting.

For the frosting: In a large bowl of an electric mixer add the butter, confectioners sugar, vanilla and peppermint extracts and blend until incorporated. Slowly add the heavy cream and beat until you get the consistency you prefer. Note, you can use more of the peppermint extract, but be careful as a little goes a long way.

Frost the cupcakes with an offset spatula then sprinkle the tops with crushed candy canes.

For me, these Peppermint Fudge Cupcakes are heaven on earth!

Fudgy Snickers Squares

If you have a family like mine, you know they are always looking for a sweet treat to eat at the end of a long day.  Well, if they really are anything like mine, they are constantly looking for something sweet all the time!  So, I’m always whipping up some delicious concoction for them to consume!  And if you know me, it’s got to be quick, easy and oh, so yummy.  These Fudgy Snickers Squares have a unique combination of a crispy oat crust, a silky chocolate fudge filling and most importantly, chewy caramel-nutty Snickers Bars floating on the top! The outcome is heavenly — nothing better than gooey, rich perfection!

1 1/4 cups packed brown sugar
3/4 cup butter or margarine, softened
1/2 teaspoon vanilla
1 egg
1 1/2 cups Quaker® quick-cooking oats
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups milk chocolate chips (9 oz)
1 can (14 oz) sweetened condensed milk
5 full-size Snickers® Bars, chopped (about 2 cups)

Heat oven to 350°F. In large bowl of an electric mixer, beat brown sugar and butter on medium speed until blended and fluffy. Beat in vanilla and egg. On low speed, beat in oats, flour, baking soda and salt until well blended. Reserve 3/4 cup mixture for topping and press remaining mixture in the bottom and up the sides of an ungreased 13×9-inch pan.

In 2-quart saucepan, heat chocolate chips and condensed milk over medium heat for about 5 minutes, stirring frequently, until chips are melted and mixture is smooth. Pour over crust.

Sprinkle chopped candy bars evenly over chocolate mixture. Crumble reserved oat mixture over candy.

Bake 35 minutes or until golden brown and set. Cool on cooling rack at least 2 hours. Cut bars into squares and eat.
