Pure. Simple. Easy.
Since most of us are still working and living life “at home”, we absolutely deserve easy, tasty, go-to recipes. I may have mentioned a time or two that I have never cooked and baked so much as I have over this past year.
Plan. Shop. Cook. Clean. Repeat.
It seems like I’ve been on a non-stop cooking train while working full time from the comfort of my home!
I do love baking, but having something easy to whip up is key these days.
So, if you’re in need of a quick and delicious breakfast that only takes a few ingredients, then this is the recipe for you!
You simply whisk together milk, eggs, vanilla and melted butter then add it to flour, baking soda and sugar, pour it in a pan, sprinkle some fresh blueberries and bake.
These Blueberry Sheet Pan Pancakes only take a few minutes to make and just about 10 minutes to bake. That means you can have these done and enjoyed before your first Zoom call of the day.
Easy peasy!
In my opinion, I would rather make a sheet pan full of pancakes versus standing over the stove making individual pancakes.
Don’t get me wrong, I love me a good stack of pancakes. But when we are all cooking, baking, cleaning, preparing, and working as much we are, this definately is the perfect recipe to make during the week when you are frazzled but want a nice comforting breakfast.
The texture is light and fluffy. The best thing is that they are not too sweet due to the small amount of sugar used. As well, I love adding fresh, juicy blueberries — they give the pancakes a burst of flavor along with unending health benefits!
I’m not much of a syrup person, I like to sprinkle mine with confectioners sugar. But by all means, if you love syrup, then pour it on!

Blueberry Sheet Pan Pancakes

Ingredients
- 8 tablespoons (1/2 cup)butter, melted and slightly cooled
- 1-1/2 cups milk
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 2 cups all purpose flour
- 4 tablespoons confectioners sugar
- 2 teaspoons baking soda
- 1 teaspoon vanilla powder (optional)
- 1-1/2 cups fresh blueberries
- Confectioners sugar for dusting
Instructions
- Heat your oven to 425 degrees. Spread 2 tablespoons of melted butter into a 10×13-inch sheet pan and set aside.
- In a small bowl, whisk together the remaining 6 tablespoons of butter, milk, eggs and vanilla extract. Into a large bowl add the flour, confectioners sugar, baking soda and vanilla powder and mix until blended. Pour the wet ingredients into the dry and mix with a spatula until just incorporated. It there are lumps its ok, just don’t over-mix.
- Pour mixture into prepared pan and spread evenly. Sprinkle the blueberries on the top and bake for 10-12 minutes, until lightly golden and springs back when touched. Remove from oven and let cool slightly, then cut into pieces and serve with confectioners sugar, extra blueberries and if you like, suryp.
