OK, you caught me! I do have healthy recipes on this blog!

It’s not really a secret how much I love sweets, hence the name and reason for this blog. However, recently I have been trying to incorporate a more healthy lifestyle and with that I’ll be sharing more of these types of recipes with you!

Now, that does not mean that I won’t make, share or eat sweets, it just means that some of my recipes may include healthy twists, such as being Paleo, Gluten-Free, Whole30 or the like. Maybe you have already seen some of these recipes such as my: Lemon Drizzle Cake (gluten-free), Coconut Poke Cake (dairy-free) and Curried Chicken Salad (Whole30).

And don’t fret, I will still have my basic sweet recipes (thanks to my hubs and son)! As well, I may even attempt to change up some of my tried and true recipes to a healthier version — so stay tuned!

Now back to this Slow Cooker Mexican Chicken with Lime Cauliflower Rice, which has become one of my new go-to recipes.

I’ve made this dish many times over the past several months. And now, as we enter the fall and winter months, it will be the perfect meal to prepare for yourself and your loved ones!

It’s super easy to make and it tastes great too! Pretty much you toss all the ingredients for the chicken in your slow cooker, turn it on, and while your either at work or doing something else, your delicious, healthy and satisfying meal is cooking! When it’s ready, all you need to do is sauté the cauliflower rice and voila — time to eat!

It’s great to make any day of the week for dinner, or you can prepare it on Sunday to take to the office for a weekday lunch!

The amazing combination of the tangy chicken and the zesty cauliflower rice will warm your tummy and soul!

SLOW COOKER MEXICAN CHICKEN WITH LIME CAULIFLOWER RICE

  • Servings: 4

Ingredients:

Chicken

  • 1-1/2 pounds boneless chicken breasts
  • 1/2 cup chicken stock
  • 1 (14 oz) can diced tomatoes
  • 1 medium yellow onion, sliced
  • 3 cloves garlic, diced
  • 1/2 teaspoon chili powder
  • salt and pepper to taste

Cauliflower Rice

  • 1 tablespoon olive oil
  • 1 package cauliflower rice
  • salt and pepper to taste
  • 1/4 cup fresh cilantro, roughly chopped
  • Juice and zest from 1 lime

Instructions:

Chicken

  1. Add all ingredients to a slow cooker.
  2. Make sure the chicken is completely covered, if needed add more stock.
  3. Cook on low for 4-6. hours
  4. Shred the chicken in the pot, then put on simmer until ready to use.

Cauliflower Rice

  1. To a large pan, add the oil and heat on medium until hot.
  2. Add the cauliflower and sauté until soft, about 7-10 minutes.
  3. Sprinkle with salt and pepper, then taste and adjust seasoning to your liking.
  4. Remove from heat and add cilantro and lime juice and zest and stir until combined.

To serve, simply scoop the cauliflower rice to the bottom of a bowl, add the chicken, and top with additional cilantro.
