For me, there’s nothing quite like the aroma of freshly brewed espresso wafting through my kitchen, or the comforting embrace of a warm, gooey blondie fresh out of the oven. It’s moments like these that remind me why I fell in love with baking in the first place – the joy of creating something delicious and sharing it with the ones you love.

Espresso Chip Blondies

Ingredients:

  • 3 cups all-purpose flour
  • 2 teaspoon baking powder
  • 1 tablespoon vanilla powder (optional)
  • 1/4 teaspoon salt
  • 1-1/2 cups light brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/4 cup maple syrup
  • 3 tablespoons instant espresso powder
  • 1-1/2 cups (2 -1/2 sticks) salted butter
  • 3 large eggs
  • 2 tablespoons pure vanilla extract
  • 2 cups semi-sweet chocolate chips
  • 1 cup of coarsely chopped chocolate covered espresso beans for garnish

Instructions:

  1. Preheat the oven to 350 degrees F and line a 15×10 inch baking dish with parchment paper, spray with non-stick cooking spray and set aside.
  2. Add the flour, baking powder, vanilla powder, and salt into a medium bowl and whisk until combined. Then into a large bowl, add the brown sugar, granulated sugar, maple syrup, and the espresso powder.
  3. Into a medium pot, add the butter and set over medium heat. Allow the butter to brown, until it smells toasted, about 3 minutes. Remove from the heat and pour into the sugar/espresso mixture and whisk until combined. Let cool for about 5 minutes, then add the eggs and vanilla extract and whisk until fully incorporated. Then add the flour mixture and mix until well combined. Fold in the chocolate chips.
  4. Add the mixture to the prepared baking dish and spread to an even layer with a spatula. Then bake for 30-35 minutes, until the center is set. Let cool completely on a wire rack, then lift blondies out of pan, sprinkle with the chocolate covered espresso beans, slice and enjoy!
