In case you’re wondering, yes, I’ve got some Irish heritage.
And for me, that’s always an excuse to make something for the special day we celebrate in March – St. Patrick’s Day.
Over the years I have made some delightful recipes to honor my relatives (mostly my mom) on this holiday including: Homemade Bailey’s Caramel Irish Creme, Mint Chocolate Chip Ice Cream, and Bailey’s Irish Cream Cake.
And this year I decided to make something hot, rich and satisfying. As well, I did not use any refined sugar — just a spot healthier that the classic recipe.
So, if you make this hot and delicious Honey Mocha Irish Coffee, I hope it brings you good luck and fortune.
And be warned, you may have to use your shillelagh to guard this cup of gold!

“May your thoughts be as glad as the shamrocks. May your heart be as light as a song. May each day bring you bright, happy hours. That stay with you all the year long.”
