Who would have known that combining your favorite Nestle Coffee Mate creamer with alcohol would make an amazing libation? Well, not me.

You see, while walking through the aisles of my local Raley’s grocery store, I was pursing the shelves to get some inspiration for a new recipe. And while doing so, I wondered by the flavored coffee creamers — I always wanted to try one of these and decided to spruce up my morning coffee with a dab of Nestle’s Coffee Mate Salted Caramel Chocolate creamer.

I love caramel and chocolate so the idea of stirring this decadent creamer into my hot coffee made me go just about crazy. The next morning I tried it, and I was hooked.

The more I thought about the delicious flavor combination of creamy caramel and chocolate the more I imagined the things I could use it for.

Ah, ha…a festive cocktail would be incredible. I shuffled through my liquor cabinet and pulled out my Bailey’s Irish Creme and my favorite vodka.

As I shook up the concoction, I could barely wait until I poured it into my glass. I was delighted with the outcome. The cool, creamy, thick drink was to-dye-for! It’s definitely a sipping drink, one that’s maybe best served after dinner; cozying up with a loved one, or extreme bonding with a good friend! It’s sweet, however the vodka melds the flavors together into in amazing drink!

Ingredients:
1 shot Bailey’s Irish Creme
1 shot Vodka (good quality)
1 shot Nestle Coffee Mate Salted Caramel Chocolate creamer

Instructions:
Fill a cocktail shaker with ice. Add add ingredients. Shake until well chilled. Strain into small glass & enjoy!

Throw on some green clothes, turn on that Celtic music and do a little jig as you celebrate St. Patrick’s Day by making this wonderful cake.

Well, at least it would be fun to make a cake this way! And for me, as part of my Irish heritage, well, I had to post something scrumptious and beyond delicious to celebrate this traditional and fun March holiday.

This cake is not green in color, nor is it decorated with shiny shamrocks or cute leaping leprechauns. However, one bite of this rustic, yet sophisticated Bailey’s Irish Cream Chocolate Cake will instantly bring you the luck of the Irish!

I’m just saying, this cake is legendary good! You may even become the saint of your kitchen and household for making it for your family and friends. Not sure if they make this cake in Ireland, but they should!

As well, you may just get a wee bit tipsy as it incorporates Bailey’s Irish Cream in every layer! You start with a rich Bailey’s one-layer chocolate cake, topped off with silky Bailey’s chocolate ganache, and smothered with creamy Bailey’s whipped cream!

And surprisingly, this cake is not too sweet. I think this is partly because the cake layer has coffee added which gives it a nice balance and the whipped cream has a very small amount of sugar.

Come on now, be a bit mischievous – you still have time to bake this cake to celebrate this special day! And maybe, just maybe, you will find your new pot of gold at the end of the beautiful rainbow! Yes, Irish cream spiked chocolate will be the new gold!

Bailey's Irish Cream Chocolate Cake

Ingredients

Cake:
3/4 cup all purpose flour
1 cup granulated sugar
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon kosher salt
1/2 cup buttermilk
1/4 cup vegetable oil
1 large egg
1 teaspoon pure vanilla extract
1/4 cup freshly brewed espresso coffee
1/4 cup Bailey’s Irish Creme

Ganache:
4 oz. semi-sweet chocolate, chopped
2 tablespoons heavy whipping cream
2 tablespoons Bailey’s Irish Creme

Whipped Cream:
1 cup heaving whipping cream
1 teaspoon confectioners’ sugar
2 tablespoons Bailey’s Irish Creme
1/2 teaspoon pure vanilla extract

cocoa powder and chopped semi-sweet chocolate for garnish

Instructions:

Preheat your oven to 350 degrees. Prepare an 8-inch round cake pan with non-stick spray, then line with parchment paper and spray again.

To a large bowl of an electric mixer with the paddle attachment, add the flour, sugar, cocoa powder, baking soda, baking powder and salt. Mix at low speed until combined. In a separate medium bowl, whisk together the buttermilk, oil, eggs, vanilla and Bailey’s. With the mixer on low speed, slowly add the wet ingredients to the dry until just incorporated, and then slowly beat in the hot espresso until fully incorporated. Pour the batter into the prepared pan and bake for approximately 30-35 minutes, until a toothpick inserted in the center comes out clean. When done, transfer to a wire rack and let cool for 15 minutes.

While the cake is cooling, make the ganache. In a small microwave safe bowl, add the chocolate and heavy cream. Microwave for 30 seconds. Stir. If chocolate is not completely melted, continue to microwave in 15 second intervals and stirring in between, until completely melted and smooth. Add the Bailey’s and stir until completely incorporated.

After the cake has cooled. Remove from the pan and peel off the parchment paper. Place the cake on a serving plate. Pour the ganache on the top and spread evenly with an offset spatula, then place the cake in the refrigerator to let the ganache firm up.

To make the whipped cream; place the heavy cream in a large bowl of an electric mixer with the whisk attachment, and beat on high speed. Gradually add the confectioner’s sugar and continue beating. Then slowly add the vanilla and Bailey’s and continue to beat until soft peaks form. Remove cake from refrigerator and add the whipped cream to the top. Dust with cocoa powder and garnish with a few pieces of chopped semi-sweet chocolate.

Homemade Baileys Caramel Irish Creme {1st Blogiversary!}

Yes, it’s St. Patrick’s Day today, and yes, I’m part Irish. But more importantly, it’s my 1st Blogiversary! So in honor of this extra special day, I would like to toast all of you with a glass of divine Homemade Baileys Caramel Irish Cream“May your thoughts be as glad as the shamrocks. May your heart be as light as a song. May each day bring you bright, happy hours that stay with you all the year long.”

Must be part of my Irish roots, but I love this stuff and when I discovered that you could make Homemade Baileys Caramel Irish Cream, well of course, had to give it a try. Believe me, once you whip up this tasty libation, you won’t buy it at the store any longer!  It’s an elegant drink that boasts a beautiful warm color. Just one sip of this incredibly creamy decadence, surrounded with hints of buttery caramel, sweet chocolate, rich espresso, and strong whisky will send you to the moon and warm your heart!

And this past year has been amazing for me — almost like a trip to the moon! You see, exactly one-year ago today I finally got the nerve to press the “Publish” button for my first recipe, Mint O’ Brownies, and the rest is history! Since that day I have baked, cooked and concocted, I’ve experimented, had wonderful taste testers and connected with some great friends, fellow bloggers and have loved, loved, LOVED every minute of what I have done.

As well, I have learned so much throughout the year too — I have tried to understand how to better use my fancy schmancy camera (that my husband got me) and hopefully have begun to take better photos. I have discovered link parties, blogging communities, and food photography sites, all where I have drooled and been inspired by passionate bloggers. I only wish there was more time in the day, week, and year to explore and do more! Every day, like many of you I’m sure, I juggle my crazy full-time job, an almost teen-aged boy, a super-supportive husband along with baking, photographing and writing; all the while trying to find a little time to breathe and enjoy each and every day. And, I would not want it any other way!

So from the bottom of my warmed and grateful heart, I want to take this opportunity to thank EVERYONE — and that means YOU for your continued support and inspiration! I could not have made it this far on my journey without YOU! And I truly hope that you will continue to follow my Sweet Baked Life!

Caramel-Irish-Cream

Homemade Baileys Caramel Irish Creme
(recipe inspired from The Messy Baker)

2 cups heavy cream
1-1/4 cup Jameson Irish whiskey
1/2 cup sweetened condensed milk
1/2 cup caramel sauce
1/4 cup chocolate syrup (such as Hershey’s)
1/4 cup freshly brewed espresso
1 teaspoon vanilla extract

Put all ingredients in a blender and mix on high-speed for about 30 seconds. Pour into a glass container with lid and store in the refrigerator until chilled. Before serving, shake well. Serve straight up or over ice. Will last up to 2 months.

Mint Chocolate Chip Ice Cream {no-churn}

I’m crazy for the combination of sweet chocolate and cool mint! What about you? If you’re like me, get ready to whip up a batch of this quick and easy no-churn Mint Chocolate Chip Ice Cream and your taste buds will do a happy jig! You see, ever since I was a little girl, Mint Chocolate Chip Ice Cream was my all-time favorite flavor — to this day I still adore the cool minty cream packed with rich semi-sweet morsels! And with the weather beginning to heat up around here (Winter, what Winter?), there is no better way to cool off than by enjoying a delicious frozen treat, and it’s a fun way to celebrate St. Patrick’s Day too!

Mint Chocolate Chip Ice Cream

Now I normally make this wonderful cold concoction in my electric ice cream maker, however I recently discovered that you can make ice cream with out a machine — it’s called “no-churn” and it’s ingenious!  I decided to give this a try. It was simple to make and the final result was smooth, light and sweetly delicious! I made mine a beautiful pale green color, but you can make your ice cream as dark or light as you like just by adjusting the amount of food coloring you use.

Mint Chocolate Chip Ice Cream

Mint Chocolate Chip Ice Cream {no-churn}

2 cups heaving whipping cream
4-8 drops green food coloring
1 (14 oz) can sweetened condensed milk
2 teaspoons pure mint extract
1 teaspoon pure vanilla extract
1 cup mini semi-sweet chocolate chips

In a large bowl of an electric mixer with the whisk attachment, beat the cream on high-speed, gradually add the green food coloring, a few drops at a time, until you get the color you like. Continue beating until fluffy; this will take approximately 1-2 minutes total.

In another large bowl, mix together the sweetened condensed milk and the mint and vanilla extracts. Gently fold in the whipped cream until combined. Then sprinkle the chocolate chips on top and gently fold. Pour mixture into a container, such as a loaf or glass pan, cover with plastic wrap and freeze until firm; about 6 hours.
