As I mentioned in an earlier post, June was a busy month for our family.

With that being said, one celebration I attended was my nephew’s college graduation lunch. So proud of him, by the way!

I happened to sit next to two sweet ladies, my ex-sister-in-law’s mother and her mother-in-law. Ok, I know this may be confusing, but just hang in there with me. You see, when our family gets together for special occasions, everyone attends; new family members and old ones alike, and we all get along famously!

Anyway, this is really all about the cake!

You see, during the lunch, the subject of baking came about, and for some reason (giggle) my blog came up.

These ladies were most impressed with what I was doing and wanted to know all about the yummy things I make and post.

Me, not being shy about my passion, immediately started chatting about this sweet thing and that sinfully sweet thing.

Tummies were growling and mouths were watering! Even though we were eating lunch — no one could resist dreaming of mouth-watering desserts!

Then, lo and behold, one of the ladies, (my ex-sister-in-law’s mother-in-law; yeah, I know), chimed in that she had the best and simplest chocolate cake recipe ever. And she wanted to know if I wanted to hear the recipe.

Well, YES!

She told me, “Just take a package of chocolate pudding, make it according to the instructions, then add it to your favorite boxed cake mix, and mix the two together. Do not add anything else. Pour it into a baking pan, sprinkle it with chocolate chips, toss it in the oven, and you will have the best chocolate cake ever.”

Of course, I was intrigued and knew I had to try it. And that I did. But per usual, I put my own spin on this sweet treat by adding toffee bits! The outcome was a moist delicious cake — she was right, it was fabulous!

Chocolate Chip Toffee Pudding Cake

Ingredients:

1 3.4 oz. package chocolate pudding mix
2 cups milk
1 package chocolate cake mix
1 cup mini chocolate chips
1 cup Heath Toffee Bits

Instructions:

Heat your oven to 350 degrees. Prepare a 13×9-inch baking pan with non-stick cooking spray and set aside.

In a large bowl, add pudding mix and milk and whisk until thickened, about 2 minutes. Add the chocolate cake mix and stir with a spoon until fully incorporated. Pour into prepared pan. Sprinkle the top with the chocolate chips then the toffee bits. Bake for 30-40 minutes, or until a toothpick inserted to the middle comes out clean.

Cool slightly on a wire rack, then cut into squares and serve.

Who would ever think that by adding prepared pudding to a boxed cake mix would turn into a scrumptious Chocolate Chip Toffee Pudding Cake? It’s a must try, you won’t believe how good it is!
