Peanut Butter Crunch Blondies

Feeling a little nutty lately? Me too! With work, family, baking, photography, blogging, the holidays and everything that goes along with each one of these areas, my life, probably like many of yours, is crazy! But, it’s a fun and exciting crazy — if you know what I mean?! Just remember to breathe and enjoy the moments! So why not indulge in one of life’s simple pleasures…treating yourself to something wonderfully sweet! With a bit of chocolate pick-me-up and some protein packed peanuts, get ready to sink your teeth into these sweet and salty Peanut Butter Crunch Blondies and you’ll feel like conquering the world in no time!

Even better, these scrumptious morsels are super easy and quick to make. And I must admit, I love chocolate, with brownies being one of my all-time favorite treats to bake and eat — but lately I’ve got a thing for Blondies! I love adding whatever I’m craving into the batter to make for an extra special treat! And that’s exactly what I did with these Peanut Butter Crunch Blondies, they have a rich buttery base sprinkled with creamy mini Reeses Peanut Butter Cups and crunchy dry roasted peanuts – a combination I hope you will love as much as I do!

Peanut Butter Crunch Blondies

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 stick (1/2 cup) butter, softened
3/4 cup granulated sugar
1/4 cup packed brown sugar
2 large eggs
2 teaspoons vanilla extract
1 package (8 oz) Reeses Peanut Butter Cups Minis, cut in half
1 cup dry roasted peanuts

Preheat oven to 350 degrees. Lightly butter or prepare a 13×9-inch pan with cooking spray and set aside.

In a large bowl combine the flour, baking powder and salt and set aside.  In a large bowl of an electric mixer add the butter and sugars.  Mix on medium speed for 2 minutes until well combined.  Add the eggs, one at a time, beating well after each addition.  Add vanilla and mix until combined.

With the mixer on low-speed, gradually add the flour mixture and beat until just combined.  The dough will be thick.  Remove bowl from mixer.  Add chopped Reeses Peanut Butter Cups and dry roasted peanuts and stir with a spoon until combined.

Scrape the mixture into the prepared pan.  With your hands or a spatula, spread the mixture evenly and press down gently into the pan.

Bake blondies for 30 minutes, or until top is golden brown.  Do not over bake.  Cool on a rack for about 1 hour.  Cut into squares.  Yields 12 big blondies (just the way we like ’em!)
