Oh Boy S’mores Blondies

It’s official — I’m the proud mom of a Middle Schooler! My son began his new journey just about two weeks ago and he is off to a great start. Cool clothes, rad shoes, a new and rotating schedule – including electives, wonderful teachers, a good group of kids, and some fun and amazing field trips lined up — two of which I’ve already had to sign permission slips for as the first one is September! Can’t believe how the time has flown — I still remember his first day of Kindergarten as if it was just yesterday. And yes, my heart still does hurt just a little each and every time he begins school, must be a mom thing! So in honor of his big step towards teen-hood and life, I surprised my special boy with some scrumptious S’mores Blondies. His all-time favorite!

Oh Boy S’mores Blondies

2 cups flour
2 tablespoons baking powder
1/4 teaspoon salt
1 stick (1/2 cup) butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs, room temperature
2 tablespoons pure vanilla extract
1/2 cup finely ground graham cracker crumbs
2 cups of milk chocolate chips
2 cup frozen mini marshmallows (these keep their shape when cooked)

Heat oven to 350 degrees. Prepare a 13×9-inch pan (or a 11×7-inch pan if you like your blondies thicker) with non-stick spray and set aside.

In a medium bowl add the flour, baking powder and salt and stir until combined. Set aside until ready to use.

In a large bowl of an electric mixer, beat the butter and sugar on medium speed until combined (about 2 minutes). Beat in the eggs one at a time, beating well after each addition. Then beat in the vanilla.

On low-speed, slowly add the flour and mix until just combined. Remove from stand and stir in the graham cracker crumbs. Then add the chocolate chips and frozen marshmallows and fold until combined. Please note he batter will be thick.

Spread batter in prepared pan and smooth top with a spatula. Put in oven and bake for 25-30 minutes, until the top has turned golden brown and the blondies are set. Do not over bake.

Cool the blondies in the pan on a wire rack for at least 1  hour — or as long as your family can wait! They are especially good and gooey served warm! Cut into 16 large squares and enjoy!

My son said these were the best blondies I have made to date! He absolutely loves s’mores, so I knew that these Oh Boy S’mores Blondies would be a hit with him — and yes, I was right! He especially loved the combination of the sweet milk chocolate against gooey marshmallows! I am so proud of him and all of his accomplishments to date.
