S’mores Cookie Bars

Sun. Sunny. Summer. Summertime.

Memories of days gone by.

Camping we did not do. Don’t like bugs. Don’t like dirt.

We “roughed it” every August in a two-room cabin sitting among the majestic redwoods in a secluded forest.

Across the road was the lake. Pack a picnic lunch. On the beach all day. Swimming. Making friends. Digging in the sand. Our bodies tanned with each day and glistened in the heat of the day.

As the sun set each night, the barbecue was lit. The flames kept us warm as the cool breeze gently surrounded us.

Every last morsel of food was devoured giving us the needed nourishment from being outside in the heat each day.

With the warmth of the grill, we toasted marshmallows until they were almost burnt on the outside and gooey and warm on the inside.

Quickly put between Hershey chocolate filled graham crackers. Smoosh!

From the first bite to the last, we delighted in the crunch, melted chocolate and warmed marshmallows.

The sweetness I will always remember. The good times I will never forget.

The nights were the darkest of dark.

The only thing you saw were the starts twinkling and the moon glowing.

Listening to the redwoods rustling in the breeze while owls hooted and crickets chirped.

We giggled until we fell asleep.

When morning fell upon us, we got up and repeated the fun!

SMORES COOKIE BARS

Ingredients:

1 cup all-purpose flour
1-1/2 cups coarsely crushed graham crackers
1/4 teaspoon salt
1/2 teaspoon baking soda
3/4 cup butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg
1/4 cup milk
1 teaspoon pure vanilla extract
1 cup milk chocolate chips
2 (1.55 oz ea.) Hershey bars, roughly chopped
2 cups mini marshmallows, frozen

Instructions:

Heat your oven to 350 degrees. Prepare an 8×8-inch baking dish with non-stick cooking spray, and set aside.

Add the flour, graham crumbs, baking soda and salt to a medium bowl. Stir to combine and set aside.

In a large bowl of an electric stand mixer, with the paddle attachment, add the butter and sugars and cream together on medium-high speed until light and fluffy – about 2-3 minutes. Turn down the mixer to medium-speed and the eggs,  milk and vanilla. Mix until well combined.

With the mixer on low, add the flour mixture and mix until well combined. Add the chocolate chips and chopped chocolate bars and stir with a spoon until combined. Then add the mini marshmallows and stir.

Press mixture into your prepared pan and bake for about 30-40 minutes, until the bars are browned and do not giggle. Cool completely on a wire rack, then cut into squares.

Can you believe that it’s almost the end of the summer? Me neither!

And I’m glad to be back with a post after a couple of crazy weeks around here. With my son starting high school, lots of big projects at the office, and endless home repairs — sometimes I wish things were a bit simpler!  But, no matter what, I would not change a thing!

Last week the hubs and I went to my son’s back-to-school night. The high school is amazing — his  teachers were inspiring and for me, motivating to hear them talk about their classes and what they will be covering this year. And even though there was not time to chat with the teachers, I made a special point to introduce myself to each of them — and to my surprise, they all had wonderful things to say about my son.

Ok, not saying that I did not know he is amazing (of course I know that he is!). But do you remember how nervous I was about him starting high school? Well, much to my surprise, and in a very short time my kiddo has really adjusted to high school and has immersed himself in his classes. As well, he has worked his intellectual charm on all of his teachers (all women mind you!). His French teacher even commented, “Oh, he is my favorite student.”

Huge smile on mom and dad’s faces! We are so proud of him!

Brownie S'mores | A quick and easy summertime treat | Sweet Baked Life

So, if you too have been crazed with school starting and all the new activities, then these S’mores Brownies will be a great thing for you to make and share with your family. Did I say that they are easy to make. Oh, yes. One of the things I enjoy so much is when I find a recipe that is not only easy to make, but taste great too.

You make these in small mason jars – and they can be stored right on your kitchen counter and there is nothing that needs to be refrigerated. All you do is layer the ingredients, screw the top on and you’re done. In my book, nothing is simpler!

You start with brownies –  you can make these or to save more time, you can buy them from your favorite bakery. Then you add crumbled graham crackers, chopped Hershey candy bars, and marshmallow fluff. You can then lightly toast the marshmallow fluff, add more crumbled graham crackers and candy, and either serve immediately or enjoy later.

I love making these in the mini mason jars — for me, just the right amount when you need to satisfy your sweet tooth!

Brownie S'mores

Ingredients:
1 batch of brownies (homemade or store bought), cut into medium pieces
6 graham crackers, crumbled
1  (7.5 oz) jar marshmallow fluff
2-3 Hershey’s Candy Bars, broken or cut into pieces

Instructions:
Make your favorite brownies and let cool completely (or to save time, buy them at your local bakery).

Using 10 small mason jars (I used the 4 oz. size*) begin layering the s’mores: first put the brownies at the bottom, then add the crumbled graham crackers, some candy bar pieces, then top with the marshmallow fluff.

Using a kitchen torch, lightly heat the marshmallow fluff until it begins to turn golden. Sprinkle the top with candy bar pieces and finely crushed graham crackers. Serve immediately. To store, place lid on top and you can keep on the top of your counter for up to 4 days.

*Note: If you do not have the 4-oz. mason jars, you can use 6 of the 8-oz. size.

S’mores Parfaits

S’mores and summer — they go together perfectly. And with today being National Chocolate Pudding Day, get ready to dig into these sinful no-bake S’mores Parfaits made with chocolate pudding and marshmallow whipped cream! Need I say more? Nope. They’ll be a hit for sure at any summer party!

I love s’mores. What can I say? I’m always looking for new ways to incorporate the unique flavor combination of sweet chocolate, gooey marshmallows and crisp graham crackers. Each of these ingredients are favorites of mine, so making s’mores is a no-brainer!

You start by making cool instant chocolate pudding, then to give your marshmallow fluff a bit more of a creamy texture, add some whipped cream to it — this really does make it taste so incredible, then you crush some graham crackers and you’re ready to layer these delicious tastes into one tasty treat!

Super easy, and super delish. These S’mores Parfaits are perfect in many ways. One, you don’t need to turn on your oven. Two, everyone loves s’mores. Three, they are great to eat on a hot summer day. Speaking of, there are many of these in our near future!

S'mores Parfaits

S’mores Parfaits 

1 (3.9 oz) package instant Chocolate Pudding
2 cups cold milk
1 (7 oz) jar marshmallow fluff
1/2 cup heaving whipping cream
1 package graham crackers, crushed
Mini marshmallows
Mini chocolate chips

In a large bowl add the chocolate pudding and cold milk. Whisk for about 2 minutes until pudding begins to thicken. Put in the refrigerator for about 30 minutes, or until set.

Meanwhile, in a medium mixing bowl add the marshmallow fluff and 1 tablespoon of the heavy whipping cream. With a hand-held mixer, beat until creamy. In a small bowl add the remainder of the heavy whipping cream and using a hand-held mixer, beat until stiff peaks form, about 1-2 minutes. Add the whipped cream to the marshmallow mixture, and gently fold until combined.

To assemble, layer parfait glasses with pudding, marshmallow whipped cream, mini marshmallows, mini chocolate chips, and top with graham cracker crumbs. Repeat ending with the graham cracker crumbs. Makes about 4-8 parfaits depending on how large your glasses are. Serve and enjoy.

Teenage Crush S’mores Overload Cake

As the clock reached 5:11 this morning I officially became the parent of a TEENAGER! So let’s go crazy and celebrate like any normal teen and dig into this S’mores Overload Cake! Where did the 13 years go? Not sure, but way too fast in my mind! I can’t believe my super smart, kind-hearted, fun-loving guy has now jumped into the next stage in his life. Oh no, what are we in for?

Now let me think…what will this next phase hold for him? How about cars, girls, friends, not talking to your parents (well, that has already started!), mood swings, socializing, parties, new friends, new adventures, high school, and his first teenage crush, just to name a few. And hopefully as he goes through all of this, he will remember that his mom and dad love him, probably more than he knows. We do keep telling him that we were teenagers once, but that does not seem to make any difference, because we just don’t understand. Ok, I’m sure I had the same attitude, wanted my own space and had all the other feelings that invade your being when you’re a teen. But no matter what, we will always be there for him with open arms and our good listening ears on!

So to celebrate this milestone, and to try to be a “cool mom” in his eyes, I’ve made this Teenage Crush S’mores Overload Cake which has everything my new teenager loves — chocolate cake, marshmallows, milk chocolate chips and of course, Rolo candy pieces. Yes, you are right…it has a lot of sugar, a lot of chocolate — the perfect combination for a special birthday for my extra special teen! Go ahead, crush on this!

Teenage Crush S’mores Overload Cake

1 (15.25) box chocolate cake mix
1 cup water
1/3 cup oil
3 large eggs
1 (7 oz. jar) marshmallow fluff
1/2 cup unsalted butter, softened
1 cup ground graham crackers
1 cup confectioners sugar
1 teaspoon pure vanilla extract
1 cup mini marshmallows
1 cup milk chocolate chips
1 cup Rolo candy, cut in half

Turn your oven to 350 degrees. Prepare a 9×13-inch pan with non-stick cooking spray and set aside.

In a large bowl, add cake mix, water, oil and eggs and mix using a hand-held mixer on medium speed for 2 minutes. Pour batter into prepared pan and set aside.

In a large bowl of your electric mixer with the paddle attachment, add the marshmallow fluff and butter and beat on high-speed. Slowly add the vanilla extract, then add the graham crackers and sugar until well blended and fluffy. This will take about 2 minutes. Note, the mixture will be thick.

Using a large spoon, evenly place the dollops of the marshmallow filling on top of the chocolate cake batter. Then sprinkle the mini marshmallows, chocolate chips and Rolo candy on top. Bake for 40-45 minutes or until cake is done and the marshmallows are golden (note, it’s ok that the cake is a bit loose in the middle). Remove from the oven and let cool on a wire rack. Cut into squares and serve warm.
