Who would have known that combining your favorite Nestle Coffee Mate creamer with alcohol would make an amazing libation? Well, not me.

You see, while walking through the aisles of my local Raley’s grocery store, I was pursing the shelves to get some inspiration for a new recipe. And while doing so, I wondered by the flavored coffee creamers — I always wanted to try one of these and decided to spruce up my morning coffee with a dab of Nestle’s Coffee Mate Salted Caramel Chocolate creamer.

I love caramel and chocolate so the idea of stirring this decadent creamer into my hot coffee made me go just about crazy. The next morning I tried it, and I was hooked.

The more I thought about the delicious flavor combination of creamy caramel and chocolate the more I imagined the things I could use it for.

Ah, ha…a festive cocktail would be incredible. I shuffled through my liquor cabinet and pulled out my Bailey’s Irish Creme and my favorite vodka.

As I shook up the concoction, I could barely wait until I poured it into my glass. I was delighted with the outcome. The cool, creamy, thick drink was to-dye-for! It’s definitely a sipping drink, one that’s maybe best served after dinner; cozying up with a loved one, or extreme bonding with a good friend! It’s sweet, however the vodka melds the flavors together into in amazing drink!

Caramel Mudslide Shot

Ingredients:
1 shot Bailey’s Irish Creme
1 shot Vodka (good quality)
1 shot Nestle Coffee Mate Salted Caramel Chocolate creamer

Instructions:
Fill a cocktail shaker with ice. Add add ingredients. Shake until well chilled. Strain into small glass & enjoy!

I hope you enjoyed the holiday season as much as I did. You may have noticed that I took a little break from my blog over the last week or so, just to unwind from the stress of the season and spend some well deserved quality time with my little family. I pretty much un-plugged.

You see, this year I did not take time off from work — I usually take a week off, so when the holiday season was upon me, I was bustling around trying to get everything done for both my job and Christmas with my family.

Turns out I had a lovely time over Christmas, and I hope you did too. I baked up a storm for a brunch I hosted for my family and everything was devoured instantly including; Chili Cheese Eggs, Parmesan Hash Browns and Overnight French Toast, as well there was plenty of Chocolate Mousse, Almond Roca, Chocolate Sheet Cake with Peppermint-Vanilla Frosting, Skillet Chocolate Chip Cookie, and Homemade Amaretto.

Unfortunately, most of these scrumptious goodies were gobbled up so fast that I was not able to take any photos. Guess that means I need to make everything again that did not get snapped! But not to fret, the delectable things that did get their 15-seconds with my camera will get posted soon!

With that being said, can you believe that 2015 is here? I can’t!  This year has gone by so incredibly fast for me, yet I have tried to enjoy each an every minute of this crazy year while hanging onto my family and friends for their unwavering love and support!

So if your year has been anything like mine, then it’s time to treat yourself today or throughout this New Year weekend to this truly tantalizing cocktail.

And best of all, it’s really so easy to make that you’ll be sitting by the fire enjoying this libation with your loved ones in no time.

With only 3 ingredients, you simply shake up some creme brulee infused coffee creamer along with sweet nutty amaretto and add a splash of sparkling lemon-lime soda and in just a few minutes you’ll be sipping on an elegant, frothy cocktail.

honey & sugar for glass rim
4 oz Sunnyside Creme Brulee Coffee Creamer {from Raley’s}
2 oz Amaretto
2 oz 7-Up or any lemon-lime soda
ice
Freshly grated nutmeg for garnish

In a small plate, add the sugar. Then rim 2 champagne flutes with a little honey and dip the rim into the sugar and set aside.

Fill a cocktail shaker with ice. Add the Creme Brulee Coffee Creamer, Amaretto and 7-Up. Shake vigorously and pour into prepared glasses. Lightly sprinkle the top with a bit of freshly grated nutmeg.

Hunker down during the winter storms with this warming and wonderful Homemade Amaretto!

Yep, we are preparing for the worst storm since 2008. In California we defiantly need the rain, however treacherous storms are another thing. Last week we had a “mild” storm. Freeways were overrun with water, streets flooded, and creeks reached the tipping level. And the commute, well, let’s just say it was a nightmare.

By tomorrow morning, the next big storm in 6 years will be upon us. Not something I am looking forward to. The winds will be high and shake and rattle our home, the rain will be heavy and probably non-stop, the power may be null (got our emergency preparedness kit ready) and the deluge will wreak havoc on all travelers.

We have been preparing by clearing out the gutters, putting away our outdoor furniture, securing our fences, and making sure we have plenty of firewood, batteries, water, non perishable food, and cash! And good thing we have a gas stove!!!

So, on a night like tonight the best thing to do is cozy up with your family and sip on this amazing Homemade Amaretto as you weather the storm!

You see, when I first told my husband I was going to make my own amaretto, he thought I was crazy. He stated, “Why would you want to go through all that trouble?”

Silly boy…he just does not get it. I usually only make things that are simple to prepare with hopefully a great outcome! And what he didn’t know was how simple this delectable drink is to make!

And the flavor…oh my! Absolutely divine!

Now, I have always loved amaretto. DeSorrano was my favorite. I remember my parents serving this at parties when I was a kid. I loved the bottle it came in and as I became of drinking age, the nutty flavored stuff was one of my go-to after dinner drinks.

The warmth of the aroma and flavor will immediately put you at ease. It’s great to serve straight-up, over ice or mixed hot chocolate to make even your toes tingle!

Ok, it can be a bit pricy to make due to the fact that you have to use a whole bottle of vodka. But you can always get some that is on sale, or even some stores (like Raley’s) give you 30% off when you buy 6 bottles of any type of liquor (you can mix your selection with wines and hard alcohol).

Let me tell you, once you make this Amaretto, you may not reach for that beautiful bottle in the store any more! I brought this as a hostess gift for Thanksgiving and was told it was better than that super pricey stuff; they were impressed and so was I.

Homemade Amaretto

Homemade Amaretto

2 cups granulated sugar
1 cup firmly packed light brown sugar
1 cup water
1  bottle (750 ml.) your favorite vodka
4 oz. pure almond extract
2 tablespoons pure vanilla extract

In a large heavy bottom pot, add sugars and water and cook over medium heat until sugars are dissolved. Remove from heat and let cool.

When cool, add vodka and extracts and stir until combined.

Using a funnel, pour amaretto into bottles and seal. Note, this made enough to fill approximately two 28 oz. glass bottles.

Pomtini Cocktail

Start it by serving up a delicious and refreshing Pomtini Cocktail. It’s a great way to celebrate the end your long, and probably crazy week and begin enjoying your beautiful weekend — and around here the weather is going to be spring-like! By using 100% pomegranate juice, this drink is filled with rich antioxidants — it’s sweet with a dash of tart and is the perfect color of pink perfection!

Pomtini Cocktail

1 oz. 100% pomegranate juice
1 oz. vodka
1/2 oz. Cointreau
Juice from 1/2 lime
Fresh pomegranate seeds for garnish

In a cocktail shaker filled with ice, add pomegranate juice, vodka, Cointreau and lime juice. Place lid on top and shake vigorously until well blended. To a martini style glass, add a few fresh pomegranate seeds then pour the mixture from your shaker into the glass.

Now, how easy can that be? Get your shaker ready for a workout with this Pomtini Cocktail and you’ll feel the benefits!
