Strawberry Cake

Ingredients:
For the Cake
- 1 box strawberry cake mix
- 1/3 cup unsalted butter, melted
- 1 cup milk
- 3 large eggs
For the Frosting
- 1 cup unsalted butter, room temperature
- 2 cups confectioners sugar
- 1/4 cup heavy whipping cream
- 1 teaspoon pure vanilla extract
- 1 cup strawberries, roughly chopped
Instructions
- Heat your oven to 350 degrees F. Prepare a 13×9-inch baking dish with non-stick spray and set aside.
- In a large bowl add the cake mix, butter, milk, and eggs and mix until well combined. Pour mixture into prepared pan and bake for 25-30 minutes, or until cake is set. Remove from oven and let cool completely on a wire rack.
- To make the frosting; to a large bowl of an electric mixer, add the butter and beat for about 5 minutes. Then add the sugar, heavy cream, and vanilla extract and beat until well combined, about 3 minutes. Remove the bowl and fold in the strawberries until just combined.
- Add the frosting to the cake, and smooth with an offset spatula. Refrigerate for about 1-2 hours, then slice. serve, and enjoy! Store the cake in the refrigerator — warning, it may not even make it to the refrigerator as it’s that good!
