Chocolate Molten Lava Cakes

A perfectly warm, deep, dark chocolate cakes that overflows with molten chocolate and dusted with sweet confectioners sugar — a chocolate lovers dream come true! And an amazing dessert for a festive celebration!

And today, this cake does mark a very special occasion!

For what, you may ask?

Well, it’s a day that only comes around once is a person’s life — turning the age that is the date of your birthday.

And today is that special day for my son. My one and only kid.

A big thanks to him for being my number one taste-tester, lover of sweets and for always giving your honest opinion about my baking (ok, even when I may not want it!).

So for my sweet and inquisitive little boy, who has transformed into a strong and intelligent young man, I honor you on this most special of birthdays!

You are my heart and will live there forever.

I have loved you, adored you, cuddled you, comforted you, helped you, taught you, learned with you, nurtured you, laughed with you, cried with you, grew with you, baked and cooked with you, had fun with you, and so much more!

Every day of the past 17 years, I have been here for you, taking on the never ending different rolls as your mom — and I wouldn’t have it any other way.

I have so many hopes and dreams for you and I wish they all come true. You are the best son, and I love you more than you will ever know.

I have been your biggest sports cheerleader, head photographer, Uber driver and your personal chef. I planned parties and get-togethers, sleepovers and pool extravaganzas. I have held your hand, hugged you, and stroked your hair in times when you needed it most. I have studied with you, made edits and provided suggestions for your work, have been your personal IT person, technology troubleshooter, and all around computer guru. And, when it was time I gave you the confidence to spread your wings when you needed to fly.

And all in all, I have loved every moment being your mom and love having you as my son. I am one lucky and proud mom.

So, on this ever so special 17th birthday on the 17th of the month I wish you these seventeen things: unending success and continual passion for what you love, aspiration to be the best, excitement about the adventure of life, everlasting inquisitiveness, optimism to guide you, power and strength to shape your character, confidence to be an amazing individual, kindness to overflow from your big heart, perseverance and dedication for the things you strive for, pure love and true friendships, a lot of fun times, and years and years of everlasting happiness and laughter.

CHOCOLATE MOLTEN LAVA CAKES

Ingredients:

  • 6 oz. semi-sweet good quality chocolate
  • 1 stick (1/2 cup)unsalted butter
  • 1 cup confectioners sugar
  • 3 large eggs, room temperature
  • pinch of salt
  • 1/3 cup all-purpose flour
  • A bit of extra butter and some granulated sugar to coat the ramekins
  • Additional confectioners sugar for dusting tops

Instructions:

  1. Heat your oven to 400 degrees. Generously butter 4 small 6 oz ramekins then sprinkle with some granulated sugar and tap out excess then set aside.
  2. In a large bowl add the butter and chocolate and put over a simmering pot of water. Stir gently to melt and make sure the butter and chocolate are fully incorporated and smooth.
  3. Remove the bowl from the pot and add the sugar and mix until fully incorporated. Then add the eggs, one at a time, beating after each addition. Add the salt and flour and stir until just combined.
  4. Pour the batter evenly into the 4 ramekins and bake for about 10-12 minutes, or just until the tops of the cakes are set – and soft and a bit jiggly.
  5. Let cool on a wire rack for 5 minutes then turn the cakes onto serving plates and dust with confectioners sugar.
