And if you’re days have been gloomy and filled with heavy fog — like they have been around here, why not surprise your family and bake something with apples? These Apple Walnut Cake Squares will help you see beyond the heavy haze and bring a little sunshine into your dreary days for sure!

You see, for about the last two weeks, the fog has been invading our valley. Everything is a soft shade of gray and for some, it can be very depressing. Thankfully, the sun made a brief appearance yesterday and pumped out some good Vitamin D for us all to soak up! This was especially pleasing to my son who has been coping with being sick going on 7 weeks now!

His illness has continued to invade him, and once again, we had to take him to the doctor last week. He now has to use a fancy nasal spray which hopefully will let him breathe better. He needs to use this until June when the weather clears up and is hot! Poor kiddo! Wish he was feeling better.

So, add a little sunshine into your loved ones day by whipping up a batch of these treats filled with fresh fruit and crunchy nuts. Get ready to see a big smile appear after just one bite! These baked apple gems are the perfect treat for an after school snack, a little something sweet after dinner, or just to purely make someone happy.

Apple Walnut Cake Squares

3 cups all-purpose flour
1 cup granulated sugar
3/4 cup light brown sugar
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
2 large eggs
1-1/4 cups canola oil
2 teaspoons pure vanilla extract
3 medium Granny Smith apples, peeled and chopped (about 3 cups)
1 cup chopped walnuts

Turn you oven to 350 degrees. Prepare a 13×9-inch baking pan with non-stick spray and set aside.

To a large bowl, add flour, sugars, baking soda, salt and cinnamon.

In in a medium bowl, whisk together eggs, oil and vanilla.

Add the wet ingredients to the dry and stir. Then add apples and walnuts and stir until just combined; note, batter will be thick.

Spread into prepared pan and bake for 50-55 minutes or until a toothpick inserted in the center comes out clear. Cool on wire rack. Serve warm or room temperature.
