I’m crazy for the combination of sweet chocolate and cool mint! What about you? If you’re like me, get ready to whip up a batch of this quick and easy no-churn Mint Chocolate Chip Ice Cream and your taste buds will do a happy jig! You see, ever since I was a little girl, Mint Chocolate Chip Ice Cream was my all-time favorite flavor — to this day I still adore the cool minty cream packed with rich semi-sweet morsels! And with the weather beginning to heat up around here (Winter, what Winter?), there is no better way to cool off than by enjoying a delicious frozen treat, and it’s a fun way to celebrate St. Patrick’s Day too!
Now I normally make this wonderful cold concoction in my electric ice cream maker, however I recently discovered that you can make ice cream with out a machine — it’s called “no-churn” and it’s ingenious! I decided to give this a try. It was simple to make and the final result was smooth, light and sweetly delicious! I made mine a beautiful pale green color, but you can make your ice cream as dark or light as you like just by adjusting the amount of food coloring you use.
Mint Chocolate Chip Ice Cream {no-churn}
2 cups heaving whipping cream
4-8 drops green food coloring
1 (14 oz) can sweetened condensed milk
2 teaspoons pure mint extract
1 teaspoon pure vanilla extract
1 cup mini semi-sweet chocolate chips
In a large bowl of an electric mixer with the whisk attachment, beat the cream on high-speed, gradually add the green food coloring, a few drops at a time, until you get the color you like. Continue beating until fluffy; this will take approximately 1-2 minutes total.
In another large bowl, mix together the sweetened condensed milk and the mint and vanilla extracts. Gently fold in the whipped cream until combined. Then sprinkle the chocolate chips on top and gently fold. Pour mixture into a container, such as a loaf or glass pan, cover with plastic wrap and freeze until firm; about 6 hours.
