June is one of my favorite months mostly because it’s packed with lots of fun celebrations! It starts out with my Wedding Anniversary, then moves to my dad’s birthday, my birthday (which happens to be today!), the last day of school, Father’s Day, the first day of summer and thrown into the mix this year is my son’s promotion to Middle School. Whew – now that’s a lot of celebrating going on!
So, if you’ve got a busy June like me, or just looking for a quick and easy dessert to serve at the end of a hot summer day, get ready to whip up this cool and scrumptious S’mores Ice Cream Delight that will make any celebrating even sweeter! The soft yet crisp graham crackers against the smooth vanilla bean ice cream surrounded by tiny fluffy marshmallows and frozen Snickers bits smothered in rich chocolate fudge is a heavenly lip-smacking concoction that will absolutely please any type of crowd!
S’mores Ice Cream Delight

About 20 graham cracker squares
1 container (about 1.75 qt.) vanilla bean ice cream
1 -1/2 cup Hersey’s Chocolate fudge sauce
2 cups mini marshmallows
2 king size Snickers Bars
Line a 9-inch loaf pan with plastic wrap so that it extends 2-4 inches on all sides and set aside.
Divide the ice cream evenly amongst two large bowls and let soften. After soft, add 1 cup of the marshmallows and 1 coarsely chopped Snickers Bar into each of the bowls. Gently fold until smooth.
If your fudge is thick, place opened jar in microwave for about 30 seconds. Remove and stir with a spoon until smooth and is at a consistency where you can easily pour.
To assemble, place one layer of graham crackers on the bottom of the loaf pan. Cover the bottom entirely, breaking the squares to make them fit, but be sure not to overlap. Spoon 1 bowl of your ice cream mixture over the layer of graham crackers and smooth with the back of the spoon. Then drizzle about 1/2 cup of the chocolate fudge sauce over the top of the ice cream. Repeat layering 1 more time and then top with one more layer of graham crackers. Cover with the overhang of plastic wrap and press down gently.
Freeze for at least 2 hours. When ready to serve, unmold the ice cream and remove the plastic wrap. Place wide-side down on a serving dish. Warm up the fudge sauce in the microwave (as mentioned earlier) and pour about 1/2 cup over the top. Crush 2 squares of graham crackers until they become crumbs and sprinkle over the chocolate. Slice with a sharp knife and serve immediately!
My boys told me that this was the best frozen dessert I have ever made! Get your spoon ready to dig into this sweet, refreshing and oh so yummy treat!
