It’s St. Patrick’s Day and you know what that means – something sweet, yummy and green! And there’s nothing better than the incredible combination of chocolate and mint. So here is a scrumptious dessert that includes a chewy mint brownie base with a butter cream mint frosting that’s sprinkled with a cookie mint topping. Yes, it is quite minty but definitely refreshing after a big Irish meal.
Mint O’Brownies
1 box of brownie mix (your favorite!)
Ingredients needed from box mix (oil, egg and water)
1 box of Andes Mint Candies
8 Mint Oreo Cookies
1 cube of butter (1/2 cup), softened
1 box of powdered sugar (16 oz.)
¼ cup milk
¼ tsp. pure Peppermint extract
3 drops of green food coloring
Mix brownies according to box directions then add in 1/2 package of chopped Andes Mint Candies. Bake according to box and let cool completely on rack.
Beat the sugar, butter, peppermint and green food coloring with an electric mixer for 2-3 minutes. With a spatula spread frosting evenly on top of cooled brownie base.
Then crush 8 Oreo cookies (either pulse in food processor or put in a large plastic bag and hit with a wooden roller). Place cookie crumbs in a small bowl. Chop ½ package of Andes Mint Candies, combine with the cookies and toss gently. Sprinkle topping over frosted brownies.
Cut into squares, grab a cold glass of milk or a hot cup of coffee and enjoy!
