Who would have known that combining your favorite Nestle Coffee Mate creamer with alcohol would make an amazing libation? Well, not me.

You see, while walking through the aisles of my local Raley’s grocery store, I was pursing the shelves to get some inspiration for a new recipe. And while doing so, I wondered by the flavored coffee creamers — I always wanted to try one of these and decided to spruce up my morning coffee with a dab of Nestle’s Coffee Mate Salted Caramel Chocolate creamer.

I love caramel and chocolate so the idea of stirring this decadent creamer into my hot coffee made me go just about crazy. The next morning I tried it, and I was hooked.

The more I thought about the delicious flavor combination of creamy caramel and chocolate the more I imagined the things I could use it for.

Ah, ha…a festive cocktail would be incredible. I shuffled through my liquor cabinet and pulled out my Bailey’s Irish Creme and my favorite vodka.

As I shook up the concoction, I could barely wait until I poured it into my glass. I was delighted with the outcome. The cool, creamy, thick drink was to-dye-for! It’s definitely a sipping drink, one that’s maybe best served after dinner; cozying up with a loved one, or extreme bonding with a good friend! It’s sweet, however the vodka melds the flavors together into in amazing drink!

Caramel Mudslide Shot

Ingredients:
1 shot Bailey’s Irish Creme
1 shot Vodka (good quality)
1 shot Nestle Coffee Mate Salted Caramel Chocolate creamer

Instructions:
Fill a cocktail shaker with ice. Add add ingredients. Shake until well chilled. Strain into small glass & enjoy!

Sparkling Amaretto Sour {second blogiversary}

Celebrations just got a little better with the addition of this refreshingly delightful Sparking Amaretto Sour!

You see, with today being my second blogiversary, it’s also St. Patrick’s Day, and spring just around the corner, there is no better time for me to raise my glass and toast all of you then during this most happy time of year!

Spring is one of my favorite seasons — it signifies rebirth, renew, rejuvenate, and rejoicing! I feel incredibly lucky to have this little blog of mine that I adore so much! And, blessed that my family is supportive of my creative and crazy culinary journey that I began 2 years ago. I love my guys (aka hubby and son) so much that it hurts! They are the best things this girl could ask for and not only that, but they are my built-in, ever-so truthful taste testers.

And to all of my extended family, friends, followers, fellow bloggers, it is you I thank for giving me the courage and determination to continue, to grow, be inspired, and to help me find my way amongst this large, vast food blogging community.

You all have certainly given me hope to carry on, and on the days when I need a little lift, there it is…a like, a comment, a new follower — and the feeling that someone actually read my post! I love hearing about how you have tried my recipes, switched it up, and made it your own!  It’s the simple things, the small acknowledgements which really brighten my day! It does make me feel proud knowing that little old me, touched someone with some special sweetness.

So I want to toast all of you from the bottom my heart. First,, here are some of my favorite cocktails that I have made over the years that I would like to share again with you, they include: pretty Pink Lemonade Margarita, classic Dry Vodka Martini, fruit infused Fresh Blackberry Margarita, a warming Starry Night Cocktail, and the nutty Homemade Amaretto.

And now, let me introduce my new cocktail that is truly refreshing and has a delightful flavor; it’s my Sparkling Amaretto Sour. It’s distinguished flavors and will proudly stands out as one of my favorites. As with most of my recipes, it’s super easy to make. You start with some flavorful Amaretto combined with sweet and sour mix, give it a whirl and then top it off with 7-up and a lemon slice.

The amazing outcome is a pleasurable combination of a sweetly tart libation with a nutty twist. It’s quite tasty and quite festive!

2 oz. Amaretto
2 oz. Sweet and Sour mix
Ice
7-up
Lemon slice for garnish

Into a glass add the amaretto and sweet & sour mix. Stir. Add ice to fill glass. Top off with 7-up and garnish with a slice of lemon.

Cotton Candy Daiquiri

Hey — do you know what today is? It’s National Daiquiri Day! So to honor this classic cocktail I created a fun and refreshing Cotton Candy Daiquiri to share with you!

Cotton candy in a cocktail? Oh yes.

I decided to put my spin on this drink by celebrating both National Daiquiri Day and the 161st anniversary of the California State Fair.  You see, the fair is going on right now in Sacramento and cotton candy always reminds me of this annual event. And oh, how I love cotton candy and the way it amazingly melts in your mouth. YUM!

However, I did not get to indulge in any of this sweet stuff on my visit earlier this week as one of the kids that came with us got really sick. I unexpectedly had to leave to bring the sick girl home. My hubby, son, and the other kids stayed to enjoy the rides, food and I picked them all up at the end of the night. It was truly an exhausting and long day.

And can you believe that I did not get to eat one single gooey, greasy or sweet thing there? Oh well, maybe that was a good thing!

As well, fond memories of cotton candy fill my head as I think back to high school. I worked at the local roller rink and making cotton candy was one of my favorite jobs there! Ah, how I adored the sweet aroma of heated pink sugar being spun around on a paper stick as my arm got wrapped in the sticky and delicious stuff. It was a super fun job and I especially liked giving my friends some freshly made cotton candy! Yes, I was a popular girl!

So I thought, why not incorporate some of this sweet spun sugar into this traditional cocktail and turn it into a whimsical drinkMay sound weird, but the result is tantalizing!

Cotton Candy Daiquiri

Cotton Candy Daiquiri

3/4 oz. fresh squeezed lime juice
1 tablespoon granulated sugar
2 oz. light rum
Ice
handful of pink cotton candy

In a shaker, add lime juice and sugar. Stir until dissolved. Fill up the shaker with ice. Add the rum and shake vigorously for about 30 seconds. In a glass add the cotton candy then strain the daiquiri over the cotton candy. The cotton candy will dissolve to create a delicate flavor to the daiquiri. Drink immediately.

So raise your glass of Cotton Candy Daiquiri and cheer the fair, the classic cocktail, and childhood memories!
