Why do so many people like Rocky Road Fudge? Simply put, it’s darn good! And it’s probably because of the amazing combination of chocolate, marshmallows and walnuts!

My husband is one of those people who LOVES Rocky Road Fudge. It really is his all-time top candy to eat! His favorite place to get this treat is from See’s Candies. In his honest opinion, See’s makes the best candy. Ever. Period. End of discussion. I have to admit, I also like this traditional candy shop. I have been a fan of their confections ever since I was a little girl. I adore the sweet smell of chocolate and of course, the free samples with every visit!

Now it seems, every time my hubby is craving something sweet, he will ask, “Are you going to See’s? And if so, bring me back some Rocky Road Fudge.” And about 99% of the time, it’s a, “nope” from me! That’s because I don’t really like going to the mall — that’s where the closest See’s store is located, and I would rather make the candy than buy it! Go figure!

And, let me tell you, this recipe is so easy — it only takes 4 ingredients and does not require baking!

Once ready to eat you will be delighted by the texture of smooth, rich chocolate engulfed with fluffy marshmallows and crunchy walnuts. I added lots of marshmallows and walnuts — just the way the hubs likes it!

Be warned, a little piece goes a long way. And, if you have a family who likes sweets (like mine), you may just want to make a double batch! It’s also great for snacking on in the middle of the night to satisfy that sweet craving! It’s also a great gift to share with someone special — that is if you can make it and get it out of the house without letting your family know what you’re up to!

The boys loved this stuff! Winner! I’m already thinking about making more!

Rocky Road Fudge

1 can (14 oz) sweetened condensed milk
1 package (12 oz) milk chocolate chips
4 cups mini marshmallows
2 cups walnut pieces


First, prepare an 8×8-inch baking pan with a coating of non-stick spray. Then line with parchment paper, and repeat with the spray and set aside.

Into a large bowl, add the sweetened condensed milk and chocolate chips. Microwave on high for 1 minute, then stir and microwave for about 30 second intervals until chips are melted. Be sure to take care in melting as not to scorch the chocolate. Stir to ensure chips are melted and smooth.

Add the marshmallows and walnuts, then fold until incorporated. Pour into your prepared pan and smooth to an even layer. Sprinkle a handful of mini marshmallows on top and gently press down. Place in the refrigerator until set, or overnight. Then remove from pan, slice into small squares.

Note, my husband likes a lot of marshmallows and walnuts, you can use less if you prefer. Also, no need to chop the walnuts, when you slice the candy the nuts will be sliced.

Being it was my birthday a week or so ago, and I had to celebrate with something PINK, I thought I would try out a new variation of a traditional chocolate candy bark.

I wanted the flavors of a birthday cake, without having to bake an actual cake.

And just to set the record straight – I have stopped counting the years, but will never stop celebrating!

You see, I do love a good chocolate or lemon cake for my birthday (my favs), however my mom surprised me by bringing me a lemony fruit tart from her favorite bakery in Marin to celebrate my special day.

The tart was heavenly and light, and perfect after our heavy and scrumptious Mexican feast we made and devoured!

But I still wanted something that really screamed, BIRTHDAY.

So over the weekend, I decided to make a sweet treat that included a few of my favorites; white and dark chocolate along with my favorite color, pink, which turned into a dazzling dessert!

And with the weather heating up around here to the triple digits, this is the perfect time to whip up a batch of this stuff to keep chilled  in your freezer for a quick snack when that sweet tooth starts craving something in the heat of the summer!

Young or old, everyone will love this festive and treat that’s reminiscent of a birthday cake!

Birthday Cake Bark

3 cups semi-sweet chocolate chips
2 bars (4.4 oz. each) good quality white chocolate (I used Lindt)
1 tablespoons dry yellow cake mix
10-15 Golden Oreo Birthday Cake Cookies, broken into small pieces
2-4 drops Red food coloring, to create the perfect pink color
Pink and white sprinkles for garnish


Line a cookie sheet with parchment paper and set aside.

In a medium microwave proof bowl, add the chocolate chips. Place in microwave and heat at 50% power for 30 second intervals, stirring between, until fully melted. Pour into prepared sheet and spread evenly with a spatula. Add the cookies in an even layer and press down gently. Place in the freezer.

In a pan of a double boiler on top of simmering water, break up the white chocolate and place into the pan. Stir occasionally until completely melted. Remove from heat and stir in the food coloring until you get the pink color you desire, then add the cake mix and stir until fully incorporated. Remove the pan from the freezer and pour the pink-while chocolate evenly over the cookies. Immediately sprinkle the top with colored sprinkles. Place back in the freezer until fully firm. About 2 hours or overnight.

Break into pieces and eat! Can be stored in an air-tight container in refrigerator or freezer for 1 week.

So there you have it, a beautiful candy bark that combines rich semi-sweet chocolate, smooth white chocolate, crunchy Oreo cookies, and pretty sprinkles. The textures are sinful!

Peanut Butter Cup Fudge

12 regular size peanut butter cups
1 (24 oz.) package milk chocolate chips
1 (8 oz.) can sweetened condensed milk

Line a 8×8-inch baking pan with aluminum foil. Unwrap the peanut butter cups and place 9 peanut butter cups in the bottom of the pan. Coarsely chop the remaining 3 peanut butter cups and set aside.

In a medium-heat proof bowl, add the chocolate chips and sweetened condensed milk. Place in microwave and heat for 30 seconds. Stir and if needed, heat for another 30 seconds, checking at each 10 second interval to ensure the chocolate does not scorch. Mixture should be almost melted. Remove from microwave and stir until smooth.

Pour the chocolate mixture over the peanut butter cups and smooth the top with the rubber spatula. Sprinkle the top with the chopped peanut butter cups. Place in the refrigerator until cool (about 1-2 hours). When ready to eat. Lift the fudge out of pan with the ends of the aluminum foil, then take the foil off and place on a cutting board. With a sharp knife, cut the fudge in small squares. Store in the refrigerator.

White Chocolate Gingersnap Bark

And with only two ingredients this bark could not be easier! So if you’re short on time and need of a scrumptious treat, you have got to try this simple White Chocolate Gingersnap Bark. And even better – no baking required.

You start by melting creamy white chocolate then add in some chopped gingersnap cookies, let the confection harden, and voila, you’ve got a candy goodie ready for everyone to enjoy.

Now I have made all kinds of “bark” in my day, but this recipe by far is the easiest. And the flavors are reminiscent of the holidays. If you are considering baking and decorating a gingerbread house (which I have done my fair share of and I don’t really like doing!) you might want to reconsider! This bark is much easier, less stressful, and the combination of cool creamy chocolate surrounded by warm crunchy gingersnaps is simply divine!

You see, I’m all about staying stress-free over the holidays (or at least I really try), and this recipe is so simple, it will not even feel like you’re going to any trouble to create a wonderful sweet.

3 packages (11 oz. each) Ghirardelli Premium White Chips
20 gingersnap cookies

Get out a rimmed 11×13-inch non-stick baking pan. If you do not have a non-stick pan, line with wax paper.

Into a medium bowl, break up the cookies and set aside.

Place chips in a double boiler over gently simmering (not boiling) water. If you do not have a double boiler, you can use a glass bowl over a pot. Stir chips until melted. Take care in not over heating the white chocolate or it could break. As well, you can also melt the chips in a microwave according to the package directions.

When chocolate is melted, remove from heat and add cookies. Stir until combined. Pour into pan and put in refrigerator for 2 hours or until set. Remove and slide bark out of tray. Slice with knife or use your hands to break up.
