Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 3/4 cup (1-1/3 sticks) unsalted butter, room temperature
- 1 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 3 large eggs, room temperature
- 1 teaspoon pure vanilla extract
- 1/4 cup milk
- 1 cup apple cider
Cinnamon Sugar Topping:
- 3 tablespoons unsalted butter, melted
- 1/4 cup granulated sugar
- 1-1/2 teaspoons ground cinnamon
- pinch of nutmeg
Instructions:
- Preheat oven to 350 degrees F. Prepare a 10 cup bundt pan with cooking spray and set aside.
- Into a medium bowl add the flour, baking powder, baking soda, salt and spices and whisk until combined then set aside.
- Into a large bowl of a stand mixer using the paddle attachment, add the butter and sugars and beat on medium speed until fluffy. With the mixer on low speed, add the eggs one at a time. Scrape down the sides of the bowl between each addition. Then add the vanilla and milk and mix until incorporated. Add 1/3 of the flour mixture then 1/3 of the apple cider and repeat. Mix gently until just incorporated.
- Add the batter to your prepared bundt pan and smooth the top with a spatula. Bake for 50-55 minutes, or when a toothpick inserted in the top of the cake comes out clean. Remove cake and let cool on a wire rack for 15 minutes. Then invert the cake on to a plate or another wire rack and let the cake cool before adding the cinnamon sugar topping.
- For the topping, into a small bowl mix together the cinnamon, sugar, and nutmeg. Then using a pastry brush, coat the entire cake with the melted butter. Immediately sprinkle the cake with the cinnamon sugar mixture, and use your hands to gently press the mixture into the top and sides of the cake. Slice and enjoy!
