Vanilla Snacking Cake

Ingredients
For the Cake:
- 1-1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 tablespoon vanilla powder (optional)
- pinch of salt
- 1/2 cup (1 stick) unsalted butter, room temperature
- 3/4 cup granulated sugar
- 1/4 cup light brown sugar
- 1 large egg
- 2 teaspoons pure vanilla extract
- 3/4 cup milk
For the Frosting:
- 1/2 cup (1 stick) unsalted butter, room temperature
- 2-4 cups confectioners sugar
- 1 tablespoon vanilla powder (optional)
- 1 teaspoon pure vanilla extract
- 2-4 tablespoons heavy cream (or milk)
- 1 drop of pink food coloring gel ()or any color of your choice)
- Sprinkles for garnish (optional and your choice)
Instructions
- Preheat your oven to 360 degrees. Prepare a 8×8-inch baking dish with non-stick cooking spray and set aside.
- Into a medium bowl, add the flour, baking powder, vanilla powder (optional) and salt. Whisk until combined and set aside.
- Into a large bowl, add the butter and sugars and whisk until well incorporated. Add the egg and whisk until fully incorporated, then add the vanilla and whisk until blended. Add 1/3 the dry ingredients and mix, then add 1/3 of the milk and mix, then repeat ending with the milk. Stir until just combined.
- Pen pour the batter into the prepared pan. Bake for 30-40 minutes, or until golden brown and when you insert a toothpick into the center it comes out clean. Cool the cake completely on a wire rack before frosting.
- When the cake is cool make the frosting: combine the butter into a large bowl of a stand mixer, beat on medium-high speed until light – about 5 minutes. With the mixer on low, add the vanilla powder (optional), confectioners sugar, vanilla extract and about 2 tablespoons of the heavy cream. Beat on medium-high for about 5 minutes. If the mixture is too thick add additional milk, if too runny add more confectioners sugar. Then, add the food coloring of your choice and beat until incorporated.
- Scoop the frosting onto the top of the cake and spread to an even layer with a small offset spatula. Top with sprinkles, cut and enjoy!
