Ingredients

For the Cake:

  • 1-1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon vanilla powder (optional)
  • pinch of salt
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 3/4 cup milk

For the Frosting:

  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 2-4 cups confectioners sugar
  • 1 tablespoon vanilla powder (optional)
  • 1 teaspoon pure vanilla extract
  • 2-4 tablespoons heavy cream (or milk)
  • 1 drop of pink food coloring gel ()or any color of your choice)
  • Sprinkles for garnish (optional and your choice)

Instructions

  1. Preheat your oven to 360 degrees. Prepare a 8×8-inch baking dish with non-stick cooking spray and set aside.
  2. Into a medium bowl, add the flour, baking powder, vanilla powder (optional) and salt. Whisk until combined and set aside.
  3. Into a large bowl, add the butter and sugars and whisk until well incorporated. Add the egg and whisk until fully incorporated, then add the vanilla and whisk until blended. Add 1/3 the dry ingredients and mix, then add 1/3 of the milk and mix, then repeat ending with the milk. Stir until just combined.
  4. Pen pour the batter into the prepared pan. Bake for 30-40 minutes, or until golden brown and when you insert a toothpick into the center it comes out clean. Cool the cake completely on a wire rack before frosting.
  5. When the cake is cool make the frosting: combine the butter into a large bowl of a stand mixer, beat on medium-high speed until light – about 5 minutes. With the mixer on low, add the vanilla powder (optional), confectioners sugar, vanilla extract and about 2 tablespoons of the heavy cream. Beat on medium-high for about 5 minutes. If the mixture is too thick add additional milk, if too runny add more confectioners sugar. Then, add the food coloring of your choice and beat until incorporated.
  6. Scoop the frosting onto the top of the cake and spread to an even layer with a small offset spatula. Top with sprinkles, cut and enjoy!
