For me, love should be celebrated every day. It’s in us, around us and sometimes it is us.

Sometimes it’s disguised and hard to find, and sometimes its right there in front of us waiting to be cherished.

Love needs you. Love needs me. Love needs us.

For me, I love to bake. I love all things pink and sparkly. I love to share my treats with those I care about.

But I just don’t make these types of sweets on the day of love. I make them as much as possible.

So, show a little love today, or any day for that matter, by showering your loved ones with these pretty bars.

SUGAR COOKIE BARS

Ingredients

Cookie Bars

  • 5 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup (2 sticks), unsalted butter, room temperature
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons pure vanilla extract

Buttercream Frosting

  • 1 cup (2 sticks), unsalted butter, room temperature
  • 4-5 cups confectioners sugar
  • 2-4 tablespoons heavy cream
  • 2 teaspoons pure vanilla extract
  • 3 drops red food coloring
  • Sprinkles and candies for decoration

Instructions

For the cookie bar base:

  1. Heat your oven 350 degrees. Then prepare a 15×17-inch sheet pan with non-stick spray and set aside.
  2. To a medium bowl, add the four, salt and baking soda and whisk until combined and set aside until ready to use.
  3. In a large bowl of an electric stand mixer with the paddle attachment, add the butter and cream on high speed until pale yellow and fluffy – about 3-5 minutes. Add the sugar and continue blending until well incorporated.
  4. Add the eggs, one at a time and beat until each is fully incorporated before adding the next. Then add the vanilla and mix until fully incorporated.
  5. With the mixer on low, slowly add the dry ingredients to the wet and mix until just combined.
  6. Dump the cookie mixture into the prepared pan, and using your fingers press into the pan to form an even layer. Note, to prevent your fingers from sticking spray them with non-stick spray before pressing the dough.
  7. Bake for 15 minutes, or until the edges are lightly browned and the cookies look puffy. Let cool completely on a wire rack before frosting.

To make the frosting & frost bars

  1. In a large bowl of an electric stand mixer with the paddle attachment, add the butter and beat on high-speed for 5 minutes.
  2. Add the vanilla, sugar and heavy cream (one tablespoon at a time) and begin beating on medium-speed, if the mixture is too thick, add a bit more heavy cream, if the mixture is too thin, add more sugar until you get the consistency you like. Then add the food coloring (until you get the color you like) and beat on high-speed for 5 minutes.
  3. Add the frosting to the top of the cookie base and spread to an even layer using an offset spatula.
  4. Top with pink sprinkles and garnish with pink gel candies. Cut into squares, serve and eat!
