Time to turn your favorite cinnamon-sugar cookies into incredible blondies!
The flavor of snickerdoodles bring me back to when I was a teen. You see, my best friend’s mom taught me how to make these delicious cookies. I will never forget the unique smell of these morsels baking or their delightful taste.
Like, who doesn’t’ love cinnamon and sugar, right?
Can you believe before high school, I had never heard of snickerdoodles? I know really, where was I living? My mom baked a lot while I was growing up; her favorites to make were Toll House Chocolate Chip cookies and Peanut Butter cookies.
No complaints from me here! But I’m not sure why I had never heard of a snickerdoodle cookie, or for that matter, not even tasted one! Thank goodness I grew up and came out from under my big rock!
If you know me, you’ll know I don’t bake a lot of cookies. My husband and son would love it if I did bake more cookies, but for me, I’m a bar kinda girl. And since I’m the baker in the house, I get to decide what gets made! LOL! Ok, I do bake things they like to, well, from time to time that is!
For me, I love mixing everything together, spreading the dough into a pan, and baking my bars to golden perfection. Less time. Easy. Delicious.
Sometimes it’s the simple things that are the best, like these Snickerdoodle Blondies. They are so soft and fluffy and the crunchy cinnamon-sugar topping will make you swoon for more!
And to tell the truth — the hubs and son devoured them! That’s how I know how good they are.

SNICKERDOODLE BLONDIES

Ingredients:
- 3/4 cup butter, room temperature
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 2 large eggs, room temperature
- 2 teaspoons pure vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/8 teaspoon salt
- 1/2 teaspoon cinnamon
- Cinnamon/sugar mixture for topping
Instructions:
- Heat your oven to 350 degrees. Prepare a 13×9-inch baking pan with non-stick cooking spray and set aside. Alternatively, if you want thicker blondies you can use a smaller pan and adjust the baking time.
- In a medium bowl, whisk the flour, baking soda, salt and cinnamon until combined.
- Into a large bowl of a standing mixer add butter and sugars and beat until fluffy. Add the eggs, one at a time and beating well after each addition, then add the vanilla and mix well.
- With the mixer on low-speed, add the flour mixture and combine until incorporated, do not over mix.
- Dump the mixture into your prepared pan and using a spatula spread into an even layer. Dust with the cinnamon/sugar mixture and bake for about 30-40 minutes — until golden brown and set.
- Cool on a wire rack and slice into squares to serve.
My family is ready for me to make another batch of these Snickerdoodle Blondies, so come on and bake some today too!
