If you’re in the mood for a delicious and quick breakfast this Ham & Egg Breakfast Sandwich is the way to go!
You combine sautéed sweet ham with fluffy scrambled eggs, covered with melted american cheese and all topped on a crisp english muffin!
Now during the week I don’t have much time for breakfast since I get up super early and eating is really not on my mind. But the weekends are a different story. However, even though I have more time, I still prefer something quick and easy. And this sandwich is one of my favorite things to make and eat.
I love the combination of ham and american cheese, but you can change it up to include your favorite breakfast meat such as bacon and top it off with your favorite cheese. For me, the simplicity and traditional flavors of smokey and sweet brown sugar ham and creamy american cheese are my absolute favorite!
So, no need to travel to the drive thru — this egg and muffin breakfast is so much better made at home!
Ham & Egg Breakfast Sandwich

1 tablespoon butter
4 thin slices of Brown Sugar Ham, coarsely chopped
1 tablespoon water
3-4 slices of American Cheese
Salt and Pepper
2 whole English Muffins, toasted
In a large non-stick fry pan over medium heat, add butter and allow to melt. Then add your ham and saute for about 3-5 minutes.
Meanwhile, in a small glass bowl, add the eggs and water and whisk until well combined and bubbles form. Pour egg mixture over ham and allow to cook. Moving with a spatula as needed to “scramble” and making sure not to over cook. When almost done, place the cheese over the eggs and gently cover with either the lid of the pan or some aluminum foil so that the cheese melts.
While the eggs are cooking toast your English muffins. To assemble, gently scoop out 1/4 of the scrambled eggs and place on top of each of the 4 English muffin halves. Garnish with salt and pepper to your taste.
This Ham & Egg Breakfast Sandwich is so good, you may even want to whip-up for dinner one night when you are short on time!
