Blondies and birthdays — a great pairing! And since it’s my best friends birthday today, I thought I would share with you these Triple Chocolate Chip Cake Batter Blondies. I know Lulu loves these scrumptious bars and I hope that just the thought of them will brighten her day. I probably won’t see her until the summer, so I’ll gladly whip up another batch of these for when I do see her. I promise!
You see you don’t always have to make a cake to celebrate someone’s special day. Decadent Triple Chocolate Chip Cake Batter Blondies will defiantly put a smile on that special someone’s face! These blondies are super simple to make. You only need a 4 ingredients – cake mix, butter, eggs and chocolate chips. The end result is a light, fluffy buttery bar base with a sweet combination of milk chocolate, semi-sweet chocolate and white chocolate chips. The blondie color reminds me of a beautiful warm summer glow kissed with rich dark delight. Kind of like Lulu, so sunny and outgoing and super sweet! Her bright rays sparkle on everyone she touches!
Triple Chocolate Chip Cake Batter Blondies
(recipe adapted from Betty Crocker)
1 (15.25 oz.) package yellow cake mix
2 large eggs
1/2 cup butter, melted and slightly cooled
1/2 cup milk chocolate chips
1/2 cup semi-sweet chocolate chips
1/2 cup white chocolate chips
Preheat your oven to 350 degrees. Prepare a 11×7-inch glass baking dish with non-stick cooking spray and set aside.
In a large bowl combine the cake mix, eggs and melted butter until well blended. Add all chocolate chips and mix until combined. Note, the batter will be thick. Dump the batter into the prepared pan and either with a spatula or your hands, even out the dough and press gently to cover the pan. Bake for approximately 30 minutes, or until the blondies are set and they are golden brown on the top. Cool on a wire rack then slice and eat!
