Do you know why I love Valentine’s Day so much? Because it’s filled with yummy treats and pretty pink things! Ok, I do like it also because of the “love” aspect. But to me, nothing says love more than something sweet like these adorable lip-smacking Pink Sugar Cookie Bites.
You start by making a basic sugar cookie recipe, add a smidgen of red food coloring to turn your dough into a soft pink color, then top them off with pink sugar and mini heart-shaped sprinkles. They’re made easier by popping the dough into mini muffin tins — super simple and super delish. For sure your loved ones will adore them!
Pink Sugar Cookie Bites
2 cups all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 cup (1 stick) unsalted butter, softened
1 cup granulated sugar
1 egg
1 teaspoon pure vanilla extract
2 drops of red food coloring
pink sugar for topping
heart-shaped sprinkles for topping
Preheat oven to 350 degrees. Prepare mini muffin pans (I used 3 pans that each had 12 openings) with non-stick spray and set aside.
In a large bowl add the flour, salt, and baking soda, and stir until combined. Then, in a large bowl of an electric mixer, beat the butter and sugar until light and fluffy. Add the egg, vanilla and red food coloring and beat until smooth. Gradually add in the flour mixture just until combined. Note, the dough will be a light pink color, if you want a darker pink, add another drop or two to the dough and mix until the color is fully incorporated.
Scoop out the dough using a 1-inch cookie dough scoop (roughly about 1 tablespoon) and place into your prepared muffin pans. Sprinkle with the pink sugar and bake for about 10-12 minutes. Remove from the oven and sprinkle with more pink sugar and the heart-shaped sprinkles. Let cool in the pans for about 10 minutes then finish cooling on a rack.
