Celebration Chilled Raspberry Soup Shot

Today I celebrate the marriage of a childhood friend, and to this day my brother’s best friend, David and his beautiful fiancé, Marija!  I am so happy for these two fabulous people, who are amazing individuals and even better together! So, with tears of happiness, I toast this wonderful couple with my Chilled Raspberry Soup Shot that is not only pretty to the eye, but the taste of sweet raspberries, tangy crème fraiche topped with a sprinkling of fresh mint is an amazing combination! Just like David and Marija – a perfect pairing!

Raspberry Soup Shot

I am overjoyed for this couple, and had been looking forward to attending their wedding all summer! However, after struggling with some sudden and excruciating back pain, I visited my doctor yesterday, had some x-rays and was informed that I had an inflamed disc. Oh no! My doctor firmly sated, “I would not advise that you drive to the Bay Area, as being in a car for that long could exacerbate the problem.” Right then my eyes swelled with tears knowing that there really was no way I could go, especially since I could barely walk! So being the true romantic, I quickly, ok, not really that quick, changed my post so that I could celebrate this special couple. I am not even supposed to be on my computer, but I wanted to do this for David and Marija. Why? Well, simply because I love these two people and I wanted them to know how very much they mean to me! Thoughts of them fill my heart as I think of them today! I celebrate their love, and the beginning of their new life together as husband and wife!

Celebration Chilled Raspberry Soup Shot

1/4 cup cranberry juice
1 Tablespoon sugar
2 cups plus fresh raspberries, plus 4 additional for garnish
1/2 cup crème fraiche (our sour cream), plus more for garnish
2 fresh mint leaves, finely chopped

In a blender, combine the cranberry juice, sugar and 2 cups raspberries; cover and process until blended. Strain into small bowl and discard seeds. Add 1/2 cup crème fraiche and whisk until smooth. Pour into a small pitcher or container with a spout. Cover and refrigerate for at least 2 hours.

To serve, pour about 1/4 cup of soup into 4-6 cordial glasses. Top each with 1/2 teaspoon crème fraiche, a sprinkling of mint and one raspberry. This makes about 4-6 servings depending on the size of your glasses. Can easily be doubled.
