Classic Potato Salad

Do you know what today is? You got it, it’s National Potato Day! What could be more perfect for a potato-lovin’ girl? Nothing! That’s why I’m sharing my Classic Potato Salad with you. It’s simplicity at its finest. This recipe is actually the very first potato salad recipe I ever made. I was a bit intimidated at first since I had never made a potato salad before, but after the first time I made it I was hooked! It’s so much better than anything you will buy at your local deli counter. And believe me, after you make it, I think you will feel the same way. This is one of my go-to summer recipes. My family loves the combination of soft potatoes, crisp celery and creamy hard-cooked eggs engulfed in a tangy sauce. It really is quite easy to make. Don’t be afraid, give it a try today!

Classic Potato Salad
(adapted from Best Foods® Real Mayonnaise jar label)

2 lbs. russet potatoes (5 to 6 medium), peeled and cut into 3/4-inch chunks
1 cup Best Foods® Real Mayonnaise
2 tablespoon vinegar
1 1/2 teaspoon salt
1 teaspoon granulated sugar
1/4 teaspoon freshly ground black pepper
1 cup thinly sliced celery
1/4 cup chopped onion
4 hard-cooked eggs, chopped

Cover potatoes with water in large pot and bring to a boil over high heat. Reduce heat to medium-low and simmer until potatoes are tender, about 10-15 minutes. Drain and put into a large bowl, cool slightly. I usually put my bowl into the refrigerator as I prepare the rest.

Combine mayonnaise, vinegar, salt, sugar and pepper in large bowl. Add potatoes, celery, onion and eggs and toss gently. Serve chilled or at room temperature.
