Caramel Brownies with Baileys Caramel Glaze

What sweet treat do you make to celebrate someone’s birthday or a special occasion? How about making something new that will surprise and delight them? For me, this time of the year is filled with many a celebration, so I came up with this decadent brownie recipe, inspired by my family, our love for sweets and my passion to bake something delicious for any celebration that I can!  I also wanted this to be a sophisticated dessert with an element of pure joy with every bite.  I added my favorite Rolo candies to the inside of the brownies and topped them off with a rich Baileys Caramel glaze.   Ok, can we say “out of this world”!   And again, for me, chocolate and caramel is a perfectly delectable combination. I think I am in some type of caramel craze these days.  It’s just so darn good.

Caramel Brownies with Baileys Caramel Glaze
1 box of your favorite packaged brownie mix (I used Pillsbury Chocolate Fudge)
Eggs, water and oil according to the mix
24 Rolo candies, unwrapped
½ cup confectioners’ sugar
4 tablespoons Baileys Caramel Cream

Heat your oven to 350 degrees. Coat a 12-cavity brownie pan (I use this in my home as everyone always wants the “end” piece) with cooking spray and set aside.

Mix brownies according to package directions. Gently pour or spoon into pan cavities to about 2/3 full. Take two Rolo candies and gently press into each of the cavities, then divide the remaining batter evenly to each of the cavities to cover the Rolo candies.

Bake for 30-40 minutes until brownies are set. Remove from oven and place on a rack and allow to cool for about 30 minutes.

Meanwhile, in a small bowl, mix confectioners sugar and Baileys. If you want your glaze thicker add a bit more sugar or if you prefer it thinner, add more Bailey’s until you get the consistency you like.

After brownies have cooled, remove from pan and place on serving dish. Drizzle glaze on top. You can serve these warm or at room temperature. They are perfect with a cup of coffee at the end of a meal or a glass of champagne for a festive toast!  If you’ve got special person you want to impress, give this simple and tasty treat a try!
