Citrus Marinated Roasted Chicken

In need of a light yet comforting meal for dinner this week?  You have got to try this simple and delicious roasted chicken!  It’s super easy to prepare and the amazing aromas that will seep out of your oven and fill your home will absolutely make your mouth water!  My family loves this recipe and I hope you will too!

Citrus Marinated Roasted Chicken

4 chicken breasts (I used the kind without the bone & took the skin off)
2 lemons
2 oranges
4 garlic cloves, chopped
1/4 cup olive oil
1 Tablespoon soy sauce
1 Tablespoon honey
1/2 teaspoon red pepper flakes
Salt and pepper

Arrange chicken in a large glass baker (9×13 inch) and set aside.

Slice 1 of the lemons into 4 wedges and 1 of the oranges into 8 wedges and place around the chicken, do not put on top of the chicken or it will interfere with the cooking.

Zest about 1 teaspoon from each of the other lemon and orange and place into a small bowl.  Then cut in half and squeeze the juice from each of these into the same bowl. Stir in the olive oil, garlic, soy sauce, honey and pepper flakes.  Pour the marinade evenly over the chicken and cover with plastic warp.  Refrigerate for 8 hours or up to 12 hours overnight, turning a couple of times.

When ready to cook, preheat your oven to 425 degrees.  Remove chicken from refrigerator and sprinkle with salt and pepper and roast in the oven for 30 minutes.  Reduce heat to 375 degrees and continue to roast until the chicken is cooked through, about 30 minutes more.

Serve the chicken with the lemon and orange wedges along side a fresh green salad.  This is a perfect recipe for a weekend meal or a week night dinner with your family, or you can double the recipe for a party or just to have leftovers!
