Lemon Blackberry Chip Ice Cream {no-churn}

I used blackberry jam for this recipe, but you could use fresh blackberries if you have them.

You start by warming, straining and cooling the blackberry jam. Then you whip-up some heavy cream and crush Lemonhead candies (now that was therapeutic!).

Next you combine sweetened condensed milk, freshly squeezed lemon juice and the prepared blackberry jam. Then to put it all together you add the whipped cream and fold in some white chocolate chips and the crushed candies.

This no-churn ice cream was a masterpiece in the making! When I started, I was not sure of flavor combination, I kept changing my mind, but in the end, the flavors of lemon, blackberry, and white chocolate sounded so refreshing! And it worked!

I especially like the color – a dusty pink, dotted with the white and yellow.

Definitely three of my favorite colors! And now they are in a dessert – magnificent!

Cool, creamy, sweet and tart. Super refreshing, super delish! Just what we need to cool off in this heat!

Lemon Blackberry Ice Cream {no-churn}

8 oz. heavy whipping cream
1 (14 oz) can sweetened condensed milk
1/2 cup blackberry jam
1 lemon, juiced
1/2 cup white chocolate chips
1/4 cup Lemonhead candies, crushed

Heat the blackberry jam in the microwave for 30-60 seconds (until soft) stir with spoon then pour into a mesh strainer and let cool.

Meanwhile, add the whipping cream in a bowl of an electric mixer and beat until stiff peaks form. Be sure not to over-beat.

Then to a zip lock baggie, add the Lemonhead candies and using rolling-pin (or something hard) crush the candies until they are broken up into bits.

To a large bowl add the sweetened condensed milk, lemon juice and cooled blackberry jam and whisk until combined. Then add the whipped cream and stir with a spatula until incorporated. Add the white chocolate chips and lemonhead candies and gently fold. You can also sprinkle some chips and candy bits on the top too, like I did.

Pour into a loaf pan or ice cream container and freeze 6 hours or overnight until firm. Scoop and serve.
