So, I thought this would be the perfect day to make this beautifully scrumptious and easy Strawberry Lemon Icebox Cake.

You see, each year on my anniversary I like to make something that reminds me of that glorious warm summer day along with the divine fruit filled-lemony cake we celebrated with!

This Strawberry Lemon Icebox Cake only takes a few ingredients; strawberries, lemon juice, graham crackers, powdered sugar and whipped cream.

And in no time, you will have a fresh and delicious dessert — worthy of any celebration.

Did you notice how the strawberries and lemon zest garnish look like hearts? I did not even notice that until after I uploaded my photos! True love shining through for sure!

Strawberry Lemon Icebox Cake

Ingredients:
2 lb. fresh strawberries, sliced
2-3 packages graham crackers (about 20 full crackers)
3 cups heavy whipping cream
2 tablespoons confectioners sugar
2 teaspoons freshly squeezed lemon juice
Sliced strawberries and lemon zest for garnish

Instructions:
Add the heavy whipping cream to a bowl of a stand mixer with the whisk attachment. Beat on high-speed until soft peaks form. Add the confectioners sugar and lemon juice and continue beating until stiff peaks form.

In a 9×13-inch pan, add a small amount of whipping cream to the bottom and spread evenly. Begin making the layers by adding one layer of graham crackers, breaking the pieces as necessary to cover the bottom, then add 1/3 of the whipped cream spreading evenly over the graham crackers and 1/2 of the strawberries one layer. Repeat layers once. Then add one more layer of graham crackers and the remaining 1/3 of the whipped cream and spread to an even layer.

Cover with plastic wrap and refrigerate for at least 4 hours or overnight. When ready to serve, cut into squares and garnish with strawberries and lemon zest.

Well, at least it would be fun to make a cake this way! And for me, as part of my Irish heritage, well, I had to post something scrumptious and beyond delicious to celebrate this traditional and fun March holiday.

This cake is not green in color, nor is it decorated with shiny shamrocks or cute leaping leprechauns. However, one bite of this rustic, yet sophisticated Bailey’s Irish Cream Chocolate Cake will instantly bring you the luck of the Irish!

I’m just saying, this cake is legendary good! You may even become the saint of your kitchen and household for making it for your family and friends. Not sure if they make this cake in Ireland, but they should!

As well, you may just get a wee bit tipsy as it incorporates Bailey’s Irish Cream in every layer! You start with a rich Bailey’s one-layer chocolate cake, topped off with silky Bailey’s chocolate ganache, and smothered with creamy Bailey’s whipped cream!

And surprisingly, this cake is not too sweet. I think this is partly because the cake layer has coffee added which gives it a nice balance and the whipped cream has a very small amount of sugar.

Come on now, be a bit mischievous – you still have time to bake this cake to celebrate this special day! And maybe, just maybe, you will find your new pot of gold at the end of the beautiful rainbow! Yes, Irish cream spiked chocolate will be the new gold!

Bailey's Irish Cream Chocolate Cake

Ingredients

Cake:
3/4 cup all purpose flour
1 cup granulated sugar
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon kosher salt
1/2 cup buttermilk
1/4 cup vegetable oil
1 large egg
1 teaspoon pure vanilla extract
1/4 cup freshly brewed espresso coffee
1/4 cup Bailey’s Irish Creme

Ganache:
4 oz. semi-sweet chocolate, chopped
2 tablespoons heavy whipping cream
2 tablespoons Bailey’s Irish Creme

Whipped Cream:
1 cup heaving whipping cream
1 teaspoon confectioners’ sugar
2 tablespoons Bailey’s Irish Creme
1/2 teaspoon pure vanilla extract

cocoa powder and chopped semi-sweet chocolate for garnish

Instructions:

Preheat your oven to 350 degrees. Prepare an 8-inch round cake pan with non-stick spray, then line with parchment paper and spray again.

To a large bowl of an electric mixer with the paddle attachment, add the flour, sugar, cocoa powder, baking soda, baking powder and salt. Mix at low speed until combined. In a separate medium bowl, whisk together the buttermilk, oil, eggs, vanilla and Bailey’s. With the mixer on low speed, slowly add the wet ingredients to the dry until just incorporated, and then slowly beat in the hot espresso until fully incorporated. Pour the batter into the prepared pan and bake for approximately 30-35 minutes, until a toothpick inserted in the center comes out clean. When done, transfer to a wire rack and let cool for 15 minutes.

While the cake is cooling, make the ganache. In a small microwave safe bowl, add the chocolate and heavy cream. Microwave for 30 seconds. Stir. If chocolate is not completely melted, continue to microwave in 15 second intervals and stirring in between, until completely melted and smooth. Add the Bailey’s and stir until completely incorporated.

After the cake has cooled. Remove from the pan and peel off the parchment paper. Place the cake on a serving plate. Pour the ganache on the top and spread evenly with an offset spatula, then place the cake in the refrigerator to let the ganache firm up.

To make the whipped cream; place the heavy cream in a large bowl of an electric mixer with the whisk attachment, and beat on high speed. Gradually add the confectioner’s sugar and continue beating. Then slowly add the vanilla and Bailey’s and continue to beat until soft peaks form. Remove cake from refrigerator and add the whipped cream to the top. Dust with cocoa powder and garnish with a few pieces of chopped semi-sweet chocolate.

I’m sure you guys have days like me…get up early, have a full day at work, prepare dinner, help with homework, spend a little time with your hubs, maybe read or watch some TV, then try to unwind before you have to go to bed to wake up to do it all over again.

And lately it seems like the weeks are flying by — especially knowing that today is the first day of fall. It does not feel like it, maybe because it’s still in the 80’s here! But it really is here!!!

I was in a meeting yesterday where it was announced that there were 100 days until New Years! Yikes! I really don’t want to think about that at all. But if I have to, I’ll do it with visions of this amazing dessert dancing around my head!

This melt-in-your-mouth Espresso Chip Tiramisu is so easy to make — it requires simple ingredients and in no-time flat you will have a scrumptious dessert that will give you the energy to make it through your crazy days and this wonderful season. It’s great after a casual dinner with your honey, and even more impressive to serve to your guests — they will definitely ask for seconds!

You start with buttery pound cake, then douse it with some freshly brewed espresso, layer it with sweet concoction of cream cheese, heaving whipping cream and confectioners sugar, sprinkle with mini chocolate chips, repeat, then top it off with more mini chips and a dusting of cocoa powder.

For me, the perfect dessert that will satisfy everyone’s sweet tooth! Light and creamy in texture with the perfect combination of sweetness and bitterness. I have been making this recipe for years and each time it turns out AMAZING!

Mocha Chip Tiramisu

Ingredients:
1 package (8 oz) cream cheese, softened
1/2 cup confectioners sugar
1 teaspoon pure vanilla extract
1 cup heavy whipping cream
butter pound cake (homemade or store-bought)
1 shot espresso (or 1/2 cup strong coffee)
1/2 cup mini semi-sweet chocolate chips, plus extra for garish
2 teaspoons baking cocoa

Instructions
In a large bowl of a stand mixer with the paddle attachment, beat the cream cheese, confectioners sugar and vanilla on medium speed until smooth. Then add the whipping cream and beat until fluffy — about 1 minute.

Cut the pound cake crosswise into slices – about 1/4-inch thick. Note, I used a small loaf and cut 16 pieces. Arrange half of the cake in a single layer at the bottom of a 8-inch oval dish (you can also use an 8-inch square or 9-inch round). Brush the cake with half of the espresso. Then spread half of the cream cheese mixture over the cake using a spatula. Sprinkle evenly with mini chocolate chips. Top with the remaining cake slices. Brush the cake with the remaining of the espresso. Then spread the remaining cream cheese mixture over the top in an even layer. Sift cocoa over the top and refrigerate for 4 hours.

To serve, slice into squares and sprinkle with some mini chocolate chips. Store in the refrigerator for up to 2 days.

Oreo Toffee Layered Dessert {no bake}

Hello summer. Hello food, fun and barbecues. Hello no-bake Oreo Toffee Layered Dessert!

Yikes, even though summer just began, we have been feeling the heat for a few weeks now. It’s HOT!

What about where you live? Are you ready for a hot, sunny summer?

I am. Well, sort of! I kinda wish summer lasted all year round. Now, I love a warm summer day, but when it gets over 90 degrees and then into 100, well, I’m usually melting! Thank goodness for air conditioning and our pool!

But no matter how you slice it, I’m still a sucker for the sunshine and the summer months.

I like long summer days splashing around the pool with my teen and the hot summer nights relaxing with my hubs!

But most of all…I like sweet, easy, and cool no-bake desserts!

Oreo Toffee Layered Dessert | Sweet Baked Life

Truth be told, I absolutely hate turning my oven on during the summer, sorry Mr. Wolf! You see, where I live in Northern California, the temperatures soar so high that my oven does not even want to be touched, and if I start to turn the knob to the “ON” position — forget it! At least that’s what I keep telling myself!

So, to keep my family well stocked with sweets when the thermometer soars into double digits, I shower them with as many no-bake treats as I possibly can. Yep, this is a tradition I started a couple of years ago so the house (and me) would stay somewhat cool and I send the oven on vacation (for as long as possible)!

And it works! Me, the house, the oven and my family are all happy when we are cool and refreshed! Just like this Oreo Toffee Layered Dessert will make you feel! It starts with a crushed Oreo crust, layered with sweetened cream cheese, rich chocolate pudding, crushed Heath Bar candy, vanilla flavored whipped cream and topped with more crushed Heath Bar candy.

And after just one bite of this treat I was hooked, I could not stop eating it! It’s true — and you’re going to love it!

This is the perfect dessert to serve at any barbecue or just after any dinner for that matter. That is, if it makes it that far! Because if you are like me, once you start eating this sweet, light dessert, you will not be able to stop! Guaranteed!

Oreo Toffee Layered Dessert

Oreo Toffee Layered Dessert {no bake}

Oreo Toffee Layered Dessert
Ingredients:
25 Double Stuff Oreo Cookies
2 tablespoons unsalted butter, melted and slightly cooled

1 pint heavy whipping cream

2 teaspoons confectioners sugar
8 ounces cream cheese, softened
1 cup confectioners sugar
1 teaspoon pure vanilla extract
1 (3.9 oz.) box instant chocolate pudding mix
1-1/2 cups cold milk
1 cup (about 4 bars) Heath Bar candy, crushed

Directions:
Add the Oreos to a large zip-lock baggie and seal. Using a rolling pin, crush the cookies until you have medium-sized crumbs.

Pour the crumbs into a bowl and add the melted butter. Stir until combined then pour into a dish. Note, I used a large oval baker, however you can use a 9×9-inch or 11×7-inch pan. Press the crumbs into the bottom on the dish and set aside.

In a large bowl of an electric mixer with the whisk attachment, beat the heavy cream and 2 teaspoons of confectioners sugar and beat until slightly firm peaks form. Scoop whipped cream into a bowl and place in the refrigerator until ready to use.

Wash your mixing bowl and switch to your paddle attachment. Add the cream cheese and beat on medium until smooth. Add the 1 cup of confectioners sugar and vanilla and beat until fully incorporated.

Measure 1 cup of the whipped cream and fold into the cream cheese mixture. Gently spread the mixture over the Oreo crust and smooth with the back of your spatula. Then sprinkle ½ cup of crushed Heath Bar Candy pieces over the top.

To a medium bowl, add the pudding and milk. Whisk until smooth and set-up (about 2 minutes). Then evenly spread over the cream cheese layer.

Top with the remaining whipped cream and smooth with your spatula. Sprinkle the top with the remaining ½ cup of crushed Heath Bar Candy pieces.

Cover and refrigerate for 6 hours or overnight. Slice into large squares and serve.
